ARTICHOKE AND ROASTED PEPPER QUICHE image

Number Of Ingredients 10

1 prepared pie crust
1/2 cup shredded sharp cheese
1/2 cup shredded swiss cheese
1 15 oz. can artichoke hearts, drained and quartered
1/2 cup chopped roasted red pepper
1 cup egg substitute or 4 eggs
1 1/2 cup light or fat free cream
1/8 tsp. cayenne pepper
3/4 tsp. salt
1/4 tsp. sugar

Steps:

  • Preheat oven to 425. Line 10" pie plate with prepared pie crust. Spread cheese over crust. Place artichoke hearts on top of cheese. Spread chopped roasted red pepper over artichokes evenly. Mix egg substitute, light cream or fat-free cream, and spices. Pour over vegetables. Bake at 425 for 15 minutes. Reduce heat to 325 and bake another 30 minutes until set. Let stand 8 minutes or so before cutting.
