AUNT FANNIE'S SQUASH image

Number Of Ingredients 8

3 pounds yellow squash, diced
1/2 cup minced onion
1/2 cup cracker crumbs
2 eggs, beaten
1/2 cup butter, melted
1 tablespoon sugar
1 teaspoon salt
pepper to taste

Steps:

  • Cook squash in microwave for 20 minutes, stirring half way through. Mash. Stir together remaining ingredients except 1/4 cup of the butter and the breadcrumbs. Stir into squash. Pour into greased baking dish. Pour remaining butter over top and sprinkle with crumbs. Bake at 350 for 1 hour or until brown.
