I'm allergic to barley, so I substituted quinoa in this recipe. It turned out great! The quinoa added a nice nutty flavor to the casserole.

I'm not sure what went wrong, but my casserole turned out dry and crumbly. I think I might have added too much barley.

This casserole was a disappointment. The barley was undercooked and the vegetables were overcooked. I won't be making this again.

I followed the recipe exactly and the casserole turned out bland and mushy. I think I would have liked it better if I had used fresh vegetables and cooked the barley separately.
