Steps:
- Sweat onions & garlic in preheated saucepan w/ olive oil. Add all other ingredients and bring to a simmer for one hour. Season to taste. Add water as needed to keep from reducing too far. Simmer until diced tomatoes break down into a paste. Can optionally add browned hot italian sausage in with onion & garlic.
