Berbere (Red Pepper Spice Mixture) image

This uses dry spices, whereas the "real deal" is made by drying, roasting, pounding and grinding. For the ground chili, use dried (preferably a hotter one). It is used in many dishes. Try it on oven baked potato wedges, or sprinkled on seafood, or add it to your favorite chili recipe. Add oil to this to make a paste.

2 c dried chili peppers, stemmed and ground
5 Tbsp garlic powder
2 Tbsp onion powder
2 Tbsp ground ginger
2 Tbsp ground cloves
2 Tbsp salt
1 Tbsp ground cumin
2 tsp ground fenugreek
2 tsp ground cinnamon
2 tsp ground cardamom
1 tsp ground black pepper

Steps:

  • 1. Combine all ingredients. Mix thoroughly.
  • 2. Store mixture in an airtight container.
