1930'S APPLESAUCE CAKE (DEPRESSION ERA CAKE)

1930's Applesauce Cake (Depression Era Cake) image

This delicious depression era cake calls for just 1 tablespoons of butter. It's also called Poor Man's Cake. It's a good cake for anyone who wants a reduced fat cake, or one that does not contain eggs. If you don't have applesauce on hand you can substitute 2/3 cup of coffee... can't beat that one for economy. I love these old recipes, it's a glimpse into the past, this one was published in the Los Angeles Times, food section about 20 years ago.

Yield 10 1 casserole, 10 serving(s)

Number Of Ingredients 7

5 cups sliced apples (enough to fill a casserole pan about 3/4 full.)
1 tablespoon lemon juice
1 cup flour
1 cup either unbleached cane sugar or 1 cup brown sugar
1 teaspoon cinnamon
4 tablespoons soft butter
3/4 cup of chopped hickory nuts or 3/4 cup chopped pecans

  • Fill a medium sized casserole three - quarters full of peeled, cored, and sliced apples.
  • Add the lemon juice.
  • In a separate bowl, mix the flour, sugar, cinnamon, butter, and nuts.
  • Blend until mixture looks crumbly.
  • Sprinkle on top of the apples. Do not stir.
  • Bake in a 350 degree oven about forty- five minutes.
  • Turn oven to 450 degrees and allow it to brown quickly.
  • It can be served hot or cold.
  • If you like, you may pour cream on top.

Tips:

  • Use fresh apples: Fresh apples yield the best flavor and texture in this cake. If you don't have fresh apples on hand, you can use canned applesauce.
  • Don't overmix the batter: Overmixing can result in a tough cake. Mix just until the ingredients are well combined.
  • Use a loaf pan: This cake is best baked in a loaf pan. A 9x13 inch pan will also work, but the cake will be thinner.
  • Bake until a toothpick inserted into the center comes out clean: This is the best way to ensure that the cake is done baking.
