SPANISH RICE
Steps:
- Preheat the broiler. Place the chiles, tomatoes, and onion skin side up on a baking sheet. Place under the broiler and grill for about 10 minutes, until the skins are blackened. Cover the vegetables with a damp kitchen towel and let rest for about 20 minutes. Peel off the chile and tomato skins or scrape them off using a paring knife. Slice the chiles into 1/4-inch strips and coarsely chop the tomatoes, garlic, and onion.
- Spread half of the shredded meat in a layer in the bottom of the slow cooker. Pour the rice on top of the meat. Spoon in a layer of the roasted chiles, tomatoes, and onion. Add the remaining meat and the rice. Spoon on the remaining chiles, tomatoes, and onion.
- Combine the water or stock and salt in a small bowl and stir until the salt is dissolved. Pour into the cooker. Cover and cook on low for about 6 hours, until the rice is tender and the liquid has been absorbed.
- About 15 minutes before serving, sprinkle the cheese over the top of the casserole. Serve hot sprinkled with parsley and a dollop of sour cream.
CHINESE STICKY RICE CAKE
A sweet dessert made with glutinous rice flour (also called sweet rice flour) and red bean paste. This recipe was given to me by my Chinese sister-in-law. It is a favorite of my family. It has a firm custard-like texture which is different to many western palates.

Tips:
- Use high-quality ingredients: The better the quality of your ingredients, the better your Spanish rice will taste. Look for fresh, flavorful rice, such as long-grain white rice or basmati rice. Use ripe tomatoes, bell peppers, and onions, and fresh herbs like cilantro and parsley.
- Cook the rice properly: To achieve the perfect texture, it's important to cook the rice properly. Rinse the rice before cooking to remove any starch and impurities. Use a 2:1 ratio of water to rice, and bring the mixture to a boil. Then, reduce the heat to low, cover the pot, and simmer for 18-20 minutes. Remove the pot from the heat and let it rest for 5 minutes before fluffing the rice with a fork.
- Don't overcook the vegetables: The vegetables in Spanish rice should be tender but still slightly crisp. Cook them over medium heat until they are softened but still retain their color and texture.
- Add seasonings to taste: Spanish rice is a versatile dish that can be seasoned to your liking. Common seasonings include garlic powder, onion powder, cumin, paprika, and chili powder. You can also add fresh herbs like cilantro, parsley, and oregano.
- Serve with your favorite sides: Spanish rice is a delicious side dish that can be served with a variety of main courses. Some popular options include grilled chicken, beef, or fish, as well as tacos, burritos, and enchiladas.
Conclusion:
Spanish rice is a classic dish that is easy to make and packed with flavor. With its combination of fluffy rice, tender vegetables, and savory seasonings, it's a perfect side dish for any occasion. Whether you're serving it with a simple grilled chicken breast or a more elaborate Mexican feast, Spanish rice is sure to be a hit. So next time you're looking for a delicious and versatile side dish, give Spanish rice a try. You won't be disappointed!
