1 box Golden Vanilla cake mix
1 (15-ounce) can pure pumpkin puree
1 teaspoon Pumpkin Pie Spice
(Optional ingredients: 1/3 cup finely chopped or ground pecans or walnuts, OR 1/3 cup raisins. Can be frosted with Cream Cheese Frosting if desired. You could also use a spice cake mix and omit the pumpkin pie spice.)

Steps:

  • Preheat oven to 350°F. Line cups of a standard muffin pan with paper liners. Mix all 3 ingredients together with a spoon until well combined. Spoon batter into the muffin cups, smoothing the tops. Bake 20-22 minutes. Remove muffins to a wire rack to cool completely. Frost if desired with cream cheese frosting.

These are so moist, chewy, and delicious. Plus, you can make them so easily. Not to mention, it's vegan.

2 (18 1/4 ounce) packages Duncan Hines Moist Deluxe Spice Cake Mix
2 (15 ounce) cans pumpkin
2 teaspoons vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a large bowl for 2 minutes. Contents will be VERY thick. (Electric mixer may be used.).
  • Line muffin tin with paper cups.
  • Fill 2/3 full with batter.
  • You may add a 1/4 cup of water to make it easier to stir.
  • Bake 22 to 24 minutes.
  • Optional: sprinkle tops with cinnamon sugar before placing in oven if you don't use frosting.

CHOCOLATE PUMPKIN MUFFINS (ONLY 3 INGREDIENTS!)



Chocolate Pumpkin Muffins (only 3 ingredients!) image

1 box Devil's Food cake mix
1 can (15 ounce) unsweetened pumpkin puree
1/3 cup applesauce
Optional: 1/2 cup chocolate chips (I used mini-chocolate chips in the picture)

Steps:

  • *DO NOT follow the instructions or use the ingredients on the back of the cake mix box.
  • Add the cake mix, pumpkin puree, and applesauce to a large bowl. Mix well either by hand or with a hand mixer. When thoroughly blended, fold in chocolate chips (if using). The batter will be pretty dense.
  • Line a cupcake tin with cupcake liners and lightly spray each liner with non-stick cooking spray. Spoon batter into each liner until it is about 3/4 of the way full (I was able to get about 12-14 muffins). The shape of each muffin will be a little irregular because of the density of the batter.
  • Bake according to the directions on the back of the cake mix box (I baked mine at 350 degrees for 18-22 minutes). Stick a toothpick in the middle of muffin to make sure the middles are done.
