Provided by Kare for Kitchen Treaty

Categories     Main Course

Time 1h35m

Number Of Ingredients 8

1 tablespoon olive oil
1 tablespoon minced garlic (about two or three large cloves)
1 teaspoon dried oregano or 1 tablespoon fresh chopped oregano (if using fresh, add at the end of the cooking time)
2 (14.5 ounce) cans diced tomatoes (undrained) (or 2 pounds diced fresh tomatoes)
1 teaspoon granulated sugar (can substitute honey or agave nectar)
1/2 teaspoon red pepper flakes
1/2 teaspoon kosher salt
Black pepper to taste

Steps:

  • In a medium saucepan over low heat, warm the olive oil.
  • Add the garlic and cook, stirring, for about a minute. If you're using dried oregano, add that along with the garlic. If you're using fresh, add it to the sauce at the end of the cooking time.
  • Increase the heat to medium. Add the tomatoes, sugar, red pepper flakes, salt, and black pepper.
  • Leave over medium heat, stirring occasionally, until boiling. Reduce heat to low for a nice simmer.
  • Gently simmer uncovered for 90 minutes, stirring occasionally.
  • Stir in fresh oregano, if using that instead of dried.
  • Allow the sauce to cool to a safe temperature and then, using an immersion blender or working in batches with a blender, puree sauce.
  • Assemble pizza using your delicious homemade sauce, or refrigerate until ready to use. Keeps well in the fridge for about 4 days. I love to freeze this sauce in individual-pizza portions, too.

Tips:

  • Select the ripest tomatoes: The quality of your tomatoes will greatly impact the flavor of your sauce. Choose tomatoes that are deep red and free of blemishes.
  • Use a variety of tomatoes: Don't be afraid to mix and match different types of tomatoes for a more complex flavor. For example, you could use a combination of Roma, cherry, and heirloom tomatoes.
  • Roast your tomatoes: Roasting tomatoes before making the sauce intensifies their flavor and gives them a slightly smoky taste. To roast tomatoes, simply toss them with olive oil and salt, and then roast them in a preheated oven at 400 degrees Fahrenheit for about 30 minutes, or until they are softened and slightly caramelized.
  • Use fresh herbs: Fresh herbs add a burst of flavor to tomato sauce. Some good options include basil, oregano, and thyme.
  • Don't overcook the sauce: Tomato sauce is best when it is cooked for a short amount of time. Overcooking can make the sauce bland and watery.
  • Taste the sauce as you go: The best way to ensure that your sauce is perfectly seasoned is to taste it as you go. Add salt, pepper, and other seasonings to taste.

Conclusion:

This no-cook fresh tomato pizza sauce is a quick and easy way to add flavor to your next pizza. Made with fresh tomatoes, garlic, basil, and oregano, this sauce is packed with flavor and is sure to be a hit with your family and friends. So next time you're looking for a delicious and easy pizza sauce, give this recipe a try. You won't be disappointed!
