7-UP PIE CRUST

7-Up Pie Crust image

This is a recipe I tweaked from cdkitchen.com. It originally called for lard, but I don't care for it, so I subbed half butter, half shortening. I made this for a Colonial Apple Pie, and it was delicious! The 7-Up sounds strange, but you don't taste it at all. It just makes the crust flakey.

FRIED MANICOTTI DIPPERS

Fried Manicotti Dippers image

At first glance, you might think these are just giant mozzarella sticks. But a bite reveals that they are so much more--a pasta hors d'oeuvre with a crunch on the outside and the soul of a mozzarella stick within.

Time 1h

Yield 8 servings

Number Of Ingredients 13

8 dry manicotti shells
1 cup ricotta
1/4 cup grated Parmesan
1 clove garlic, grated
1/2 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes
5 large eggs
Kosher salt and freshly ground black pepper
8 mozzarella cheese sticks
3/4 cup all-purpose flour
1 cup plain breadcrumbs
Canola oil, for frying
Warmed marinara sauce, for serving

Steps:

  • Cook the manicotti shells according to the package directions for al dente. Strain and place on a baking sheet to let the noodles cool to room temperature, about 15 minutes. Meanwhile, mix the ricotta, Parmesan, garlic, Italian seasoning, red pepper flakes, 1 egg, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl until smooth. Spoon into a large resealable plastic bag and snip 1/2 inch off of one of the corners.
  • Push 1 mozzarella stick into the center of each noodle. Pipe the ricotta mixture into the center of each noodle (you may have to pipe into both ends to fill the whole noodle). Place back on the baking sheet.
  • Set up a breading station with three shallow dishes: Stir together the flour, 1/4 teaspoon salt and a few grinds of pepper in the first dish. Beat the remaining 4 eggs in the second dish and add the breadcrumbs to the third dish. Coat a noodle in the flour, then dip into the egg, letting any excess drip off. Finally, press into the breadcrumbs. Transfer to the baking sheet and repeat with the remaining noodles.
  • Heat 1/2-inch of oil in a large skillet over medium-high heat and line a plate with a paper towel. Drop a few breadcrumbs into the oil; if they sizzle, the oil is hot enough. Working in batches, fry the noodles, flipping halfway through, until golden brown and the cheese is melted and starting to ooze through the sides, about 4 minutes total. Transfer to the lined plate and repeat with the remaining noodles, making sure to heat the oil back up between each batch. Serve with marinara sauce on the side for dipping.

CHARRED LEMON RICOTTA DIP WITH DIPPERS

Categories     appetizer

Time 15m

Yield 6 to 8 servings

Number Of Ingredients 12

1 tablespoon olive oil, plus more for drizzling
2 lemons, halved
3/4 cup ricotta
2 tablespoons mayonnaise
1 clove garlic, finely grated
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh mint
1/2 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
Paprika, for dusting
Assorted raw vegetables such as cucumbers, bell peppers, carrots, celery and radishes, for dipping

Steps:

  • Heat the oil in a small skillet over medium-high heat. Place the lemons in the skillet cut side down and cook without moving until golden brown, about 3 minutes. Squeeze the juice of 2 of the halves into a medium mixing bowl. Add the ricotta, mayonnaise, garlic, chives, mint, Worcestershire and cayenne and stir to combine. Season with salt and pepper to taste. Transfer the mixture to a small serving bowl and drizzle with olive oil then dust with paprika. Serve with the remaining charred lemon on the side and the vegetables for dipping.

Tips:

  • To make the perfect 7UP pie crust dippers, start with a flaky pie crust. You can use a store-bought pie crust or make your own from scratch. If you're making your own, be sure to chill the dough for at least 30 minutes before rolling it out.
  • Use a sharp knife or pastry cutter to cut the pie dough into even strips. This will help ensure that the dippers cook evenly.
  • Don't overcrowd the baking sheet. Leave some space between the dippers so that they can cook evenly.
  • Bake the dippers until they are golden brown and crispy. This will usually take about 10-12 minutes.
  • Serve the dippers warm with your favorite dipping sauce. Some popular options include chocolate sauce, caramel sauce, and fruit preserves.

Conclusion:

7UP pie crust dippers are a delicious and easy-to-make treat that can be enjoyed by people of all ages. They're perfect for parties, potlucks, or just a simple snack. So next time you're looking for something sweet and satisfying, give these dippers a try. You won't be disappointed!
