1 tablespoon unsalted butter
1 onion, roughly chopped
3 garlic cloves, minced
1 1/2 tablespoons tomato paste
1 1/2 tablespoons Achiote paste, crumbled
2 tablespoons white vinegar
2 cups chicken stock
1 teaspoon salt
2 teaspoons cracked black pepper

Steps:

  • In a medium saucepan, over medium-low heat melt the butter. Cook the onions until soft and translucent, 12 to 15 minutes. Stir in the garlic and tomato and Achiote paste and cook an additional 3 to 5 minutes, stirring frequently. Add the chicken stock, salt and black pepper. Bring to a boil, reduce to a simmer and cook, stirring and skimming frequently, 12 to 15 minutes. Add the vinegar and cook at end for 2 to 3 minutes. Puree in a blender or food processor. 1 1/2 cups fresh lime juice (12 limes)
3 garlic cloves, minced
2 teaspoons achiote paste*
1 teaspoon dried oregano leaves
1 teaspoon ground cumin
1 1/2 pounds skinless boneless chicken thigh meat, cut into 1-inch pieces
2 jalapeño chilies
1 20-ounce jar guava shells in syrup,* strained, 5 tablespoons syrup reserved, shells pureed
1 tablespoon chopped fresh cilantro

Steps:

  • Blend 1 cup lime juice, garlic, achiote paste, oregano, and cumin in processor until smooth. Season marinade to taste with salt and pepper. Place marinade in medium bowl. Add chicken; stir to coat. Cover and refrigerate chicken overnight.
  • Preheat oven to 400°F. Place chilies on small baking sheet. Roast until soft, about 20 minutes. Stem and seed chilies. Transfer chilies to processor. Add pureed guava, reserved guava syrup, cilantro, and remaining 1/2 cup lime juice. Process until smooth. Season sauce to taste with salt and pepper. Transfer to medium bowl. 3 tablespoons vegetable oil
1 tablespoon achiote seeds (annatto)
1/2 cup red wine vinegar
5 garlic cloves, coarsely chopped
1 tablespoon seeded and finely chopped jarred aji amarillo bell peppers or 1 tablespoon fresh habanero
2 teaspoons ground cumin
2 teaspoons kosher salt
2 teaspoons fresh ground black pepper
1 lb pork loin, cut into 1-inch cubes
1 pineapple, peeled, cored, and cut into 1-inch cubes
1 large red onion, quartered, halved, and cut crosswise
1 head butter lettuce, such as Bibb
lime wedge, for serving

Steps:

  • Put wooden skewers in a pan of water for 30 minutes, so they don't burn on the grill.
