1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup mayonnaise
2 tablespoons chopped pickled jalapenos
2 tablespoons whole grain mustard
1 tablespoon ketchup
1 tablespoon hot sauce
1 scallion, thinly sliced

Steps:

  • For the fried shrimp: Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple paper towels, then season with a pinch of salt and a few grinds of black pepper.
  • Whisk the flour with 3/4 teaspoon salt and few grinds of pepper in a shallow bowl or baking dish. Whisk the eggs with a pinch of salt in another shallow bowl. Add the panko to a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten eggs. Dredge in the panko, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and repeat with the remaining shrimp.
  • Preheat the air fryer to 385 degrees F. Working in batches, place some of the shrimp in a single layer in the fryer basket, then spray lightly with more cooking spray. Cook until the shrimp are golden brown and cooked through, flipping halfway through, about 10 minutes.

1 tablespoon minced garlic

1 tablespoon Sriracha sauce
1 tablespoon honey
½ tablespoon lime juice
½ tablespoon soy sauce
½ teaspoon minced garlic
½ pound large raw tail-on shrimp
2 green onions, chopped

Steps:

  • Preheat the air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Whisk Sriracha, honey, lime juice, soy sauce, and garlic together in a large bowl. Stir in shrimp until well coated.
  • Place shrimp in the air fryer basket with tongs; cook for 3 minutes. Transfer shrimp back to the sauce and stir. Place shrimp back in the basket and cook for 3 minutes more. Garnish with chopped green onions.

The air fryer does a fine job with these larger shrimp, about 21 to 25 per pound. Butterflying them makes quick work of the cooking time. Serve with this delicious, fruity salsa, or with your favorite dipping sauce.

1 cup diced pineapple
1 cup diced mango
⅓ cup diced red bell pepper
2 tablespoons fresh lime juice
1 small jalapeno pepper, seeded and minced
2 tablespoons minced red onion
¼ cup minced fresh cilantro
sea salt to taste
1 cup ice, or as needed
1 pound raw shrimp
1 large egg
⅛ teaspoon cayenne pepper, or to taste
sea salt to taste
2 cups panko bread crumbs
parchment paper
avocado oil spray
lime slices for garnish (optional)

Steps:

  • Combine pineapple, mango, bell pepper, lime juice, jalapeno pepper, onion, cilantro, and sea salt in a bowl; stir to combine. Cover and refrigerate, until ready to use.
  • Set a bowl of ice on the work space.
  • Clean each shrimp by removing the head with a twisting motion. Cut along the back of the shell with kitchen shears or a sharp paring knife, and peel off the shell, removing the legs with the shell. Reserve heads and shells for stock, if desired. Clean away the vein that runs along the back, and cut deeper into the shrimp, lengthwise, toward the tail, but not all the way through, to butterfly the shrimp. Place each cleaned and butterflied shrimp on the ice.
  • Place egg in a medium bowl and stir to combine the yolk and the white. Season with cayenne pepper and sea salt. Spread panko crumbs on a plate, and cover a second plate with parchment paper.
  • Remove each shrimp from the ice bowl and place into the egg mixture. One by one, remove shrimp from the egg mixture and place on the panko crumbs. Pat panko into the top side, then place each shrimp on the parchment-lined plate. Repeat, until all the shrimp are coated in panko. Spray with avocado oil spray.
  • Place shrimp in a single layer in the air fryer with the sprayed side down without touching each other. Spray the top of the shrimp with avocado oil spray.
  • Air fry at 390 degrees F (195 degrees C) for 4 minutes. Carefully turn shrimp and continue for an additional 3 minutes.
  • If 2 batches are required, refrigerate raw shrimp while the first batch is cooking. Serve with pineapple and mango salsa and additional lime slices, if desired.

1 teaspoon McCormick® Paprika
1 ¼ teaspoons kosher salt, plus more to taste

1 lb shrimp, shrimp, peeled and deveined, tails left on
½ cup all purpose flour
2 large eggs, beaten
1 cup unsweetened coconut flakes
⅓ cup panko breadcrumbs
coconut oil spray, for greasing
½ lime, juiced
½ cup sweet chili sauce, for serving (optional)

Steps:

  • In a small bowl, mix together the garlic powder, paprika, salt, cayenne, and black pepper.
  • Place the shrimp on a cutting board and pat dry on both sides with a paper towel. Season on both sides with the spice blend.
  • Add the flour, eggs, and coconut flakes to 3 separate shallow bowls. Add the panko to the bowl with the coconut flakes and mix to combine.
  • Dredge the shrimp in the flour, shaking off any excess. Dip the floured shrimp in the eggs, then in the panko-coconut mixture. Transfer the breaded shrimp to a clean cutting board or baking sheet.
  • Liberally spray the shrimp on both sides with the coconut oil spray.
  • Set the air fryer to 360˚F (182°C).
  • Working in batches, place the shrimp into the basket of the air fryer, being careful not to overcrowd the basket. One 18-ounce package popcorn shrimp, such as SeaPak® Popcorn Shrimp
1/4 cup long-grain white rice
Kosher salt
1/3 cup fresh cilantro leaves, roughly chopped
1 teaspoon finely grated lime zest (from 1 lime)
Four 10-inch (burrito-size) flour tortillas
1 cup canned refried black beans
1 1/2 cups shredded Mexican cheese blend (about 6 ounces)
Olive oil, for brushing
Serving suggestion: shredded iceberg lettuce, pico de gallo, diced avocado, sour cream and lime wedges

Steps:

  • Prepare the popcorn shrimp according to the package directions for the air fryer.
  • Bring 1/2 cup water to a simmer in a small saucepan over medium-high heat. Stir in the rice and 1/2 teaspoon salt. Return to a simmer, cover with a tight-fitting lid and reduce the heat to low. Cook until all the water is absorbed and the rice is tender, about 15 minutes. Remove from the heat, let stand covered for 5 minutes and fluff with a fork. Stir in the cilantro and lime zest.
  • Wrap the flour tortillas in a damp paper towel and microwave until warm and pliable, about 30 seconds. Place the tortillas on a cutting board or clean work surface. Using a small offset spatula or the back of a spoon, spread 1/4 cup of the refried beans in the center of each tortilla in a rectangular shape. Top with 1/4 cup rice, a quarter of the popcorn shrimp and 1/4 cup of the cheese.
  • Fold in the two opposite side of the tortilla over the filling. Fold the side closest to you over the filling, then tightly roll the burrito away from you. Place the chimichanga seam-side down and brush the top and bottom with olive oil. Repeat with the remaining 3 tortillas.
  • Preheat the air fryer to 390 degrees F. Place the chimichangas in the air fryer basket seam-side down (see Cook's Note). Air fry until golden brown and crisp all over, 5 to 6 minutes. Sprinkle the remaining 1/2 cup cheese on the top of the chimichangas, then air fry 1 minute more to melt. Serve with shredded lettuce, pico de gallo, diced avocado, sour cream and lime wedges.

2 teaspoons extra-virgin olive oil, divided
salt and ground black pepper to taste
8 ounces thawed frozen jumbo shrimp - drained, peeled, and deveined
12 grape tomatoes
2 tablespoons unsalted butter, softened
2 teaspoons chopped fresh parsley
1 teaspoon hot pepper sauce
½ teaspoon lemon-pepper seasoning

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Lay polenta rounds on a clean work surface. Brush both sides with 1 teaspoon olive oil and season with salt and pepper; set aside.
  • Combine shrimp and tomatoes in a bowl. Add remaining 1 teaspoon olive oil and toss to coat. Use tongs to transfer tomatoes to the basket of the air fryer.

1 cup cherry tomatoes, halved
1/4 cup shredded Parmesan cheese
1/2 cup all-purpose flour
