1 large zucchini, ends trimmed
1 egg
¼ cup melted butter
¼ cup all-purpose flour
1 teaspoon dried oregano
1 teaspoon garlic powder
freshly ground black pepper to taste
1 cup panko bread crumbs
¼ cup freshly grated Parmesan cheese

Steps:

  • Cut zucchini into two or three 3-inch pieces, then spiralize each piece.
  • Whip egg in a shallow bowl until foamy. Carefully pour melted butter into egg and whip until blended.
  • Combine flour, oregano, garlic powder, and pepper in a second shallow bowl. Stir together panko bread crumbs and Parmesan cheese in a third bowl.

2 tbsp spray oil

3 zucchinis ((mine were medium sized))
1 cup flour
1 Tablespoon garlic powder
Salt and pepper ((to taste))
2 eggs
½ cup panko breadcrumbs
½ cup breadcrumbs
¼ cup grated Parmesan cheese ((the powder kind, not freshly shredded))
non-stick cooking spray ((canola oil, olive oil, or butter flavor will work))

Steps:

  • Cut the ends of each zucchini. Then cut each zucchini into half (length wise), then cut each piece in half again so that you have 4 long wedges. Cut each wedge in half so that you have 8 wedges total that are equal in size and width (each about 3 inches long). Set aside.
  • Spray the bottom of the air fryer pan with non-stick cooking spray.
  • Pull out 3 small mixing bowls. In the first bowl, mix together flour, garlic powder, and salt and pepper.
  • In the second bowl, beat the eggs.
  • In the third bowl, mix together the panko breadcrumbs, regular breadcrumbs, and Parmesan cheese. You can also add salt and pepper if desired.
