Time 1h30m

Yield 6 to 8 servings

Number Of Ingredients 13

8 tablespoons (1 stick) unsalted butter
4 medium yellow squash, cut into 1/2-inch-thick rounds (about 2 1/2 pounds)
Kosher salt and freshly ground black pepper
1 green bell pepper, diced
Half medium onion, diced
2 cloves garlic, minced
1/2 cup sour cream
4 large eggs
8 ounces shredded Cheddar (about 2 cups)
1/2 teaspoon thyme leaves (from 10 sprigs)
4 sprigs fresh chives, chopped
1 sleeve buttery crackers, such as Ritz (about 30 crackers), crushed
1/2 teaspoon hot sauce

Steps:

  • Preheat the oven to 400 degrees F. Put a large colander inside a large bowl.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add a third of the squash to the skillet, arrange in a single layer and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Cook, tossing occasionally, until the squash begins to soften and are golden brown spots, about 5 minutes. Transfer to the colander. Repeat 2 more times using 2 tablespoons of butter for each batch and sprinkling with 1/2 teaspoon salt and few grinds of pepper. Transfer each batch to the colander.
  • Add 1 tablespoon butter to the skillet along with the pepper and onion and cook, stirring occasionally scraping up any brown bits, until the vegetables are soft, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Let cool for 5 minutes then fold into the squash. Transfer the mixture to a 2-quart casserole dish.
  • Whisk together the sour cream, eggs, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Fold in the Cheddar, thyme and chives. Pour over the squash making sure that some of the mixture sinks down to the bottom.
  • Microwave the remaining tablespoon of butter in a medium bowl until melted. Fold in the crackers and hot sauce. Sprinkle evenly over the squash. Bake until the eggs are cooked through and the crackers are golden brown, 30 to 35 minutes. Let sit for 10 minutes before serving.

MA FERN'S SQUASH CASSEROLE

Ma Fern's Squash Casserole image

I grew up in Alabama and learned to make squash casserole from my Ma Fern, without added calories from milk, canned soup, crackers, or bread crumbs! ---------------- NOTE: Prep time includes cool down time after the squash is sauteed! Cooking time includes estimated time for sauteing the squash, AND baking the casserole in the oven!

Provided by KerfuffleUponWincle

Categories     Onions

Time 1h50m

Yield 12 serving(s)

Number Of Ingredients 8

1 tablespoon bacon fat
3 1/2 lbs yellow squash (small squash, sliced ~ can include 1 or 2 sliced small zucchini for color ~ optional)
3 yellow onions (medium sized onions, cut into small dice)
1 tablespoon water
3/4 teaspoon salt
1/2 teaspoon black pepper (freshly ground)
3 eggs (beaten)
3 cups extra-sharp cheddar cheese (shredded)

Steps:

  • Heat bacon fat over medium-high heat, in a large iron skillet. Add squash, onions, water, salt and pepper ~ saute uncovered until squash is tender and water/squash juices have evaporated, stirring occasionally. Slight browning of the squash is okay, but be careful that it doesn't scorch!
  • Remove from heat ~ cool for 15-20 minutes.
  • NOTE: If you are IMPATIENT (like my daughter), and cannot wait until the squash has cooked dry, and the onions have developed a caramelized flavor, then DRAIN the sauteed squash in a colander!
  • Preheat oven to 350°F.
  • Add beaten eggs and shredded cheese to squash, stirring quickly to combine.
  • Pour into a 13x9 Pyrex casserole sprayed with cooking spray.
  • Bake for 35-45 minutes until set ~ should be browned lightly on the bottom. Casserole will firm-up upon cooling. Serve warm.

Categories     Vegetable

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 10

3 lbs yellow squash, sliced
1 teaspoon salt
1 teaspoon pepper
1/2 cup butter, melted
1 -8 ounce sour cream
1 (10 1/2 ounce) can cream of mushroom soup
1 cup onion, chopped
1 (8 ounce) package cornbread herb stuffing mix, divided in half
1/2 cup carrot, shredded
1 1/2 cups chicken broth

Steps:

  • Place chicken broth, squash and onions in saucepan.
  • Simmer until veggies are tender, about 15 minutes.
  • Add remaining ingredients except ½ of stuffing mix.
  • Pour into 2 or 3 quart greased casserole dish.
  • Top with remaining stuffing mix.
  • Bake at 350 degrees for 30-40 minutes until bubbly and light brown.

Tips:

  • Choose the right squash: For the best flavor and texture, choose a butternut squash that is firm and heavy for its size. Avoid squash with blemishes or soft spots.
  • Roast the squash before mashing: Roasting the squash brings out its natural sweetness and flavor. To roast the squash, preheat your oven to 400°F (200°C). Cut the squash in half lengthwise and scoop out the seeds. Drizzle the squash with olive oil and season with salt and pepper. Place the squash cut-side down on a baking sheet and roast for 45-60 minutes, or until the squash is tender. Once the squash is cool enough to handle, scoop out the flesh and mash it.
  • Use a variety of cheeses: This recipe calls for a combination of Parmesan and cheddar cheese, but you can use any type of cheese that you like. Some other good options include Gruyère, Swiss, and mozzarella.
  • Add some extras: To make this casserole even more delicious, you can add some chopped cooked bacon, diced bell peppers, or sautéed mushrooms.
  • Make it ahead of time: This casserole can be made ahead of time and reheated when you're ready to serve it. To make the casserole ahead of time, assemble it according to the recipe and then cover and refrigerate it for up to 24 hours. When you're ready to serve it, preheat your oven to 350°F (175°C) and bake the casserole for 30-35 minutes, or until it is heated through.

Conclusion:

This butternut squash casserole is a delicious and comforting dish that is perfect for a fall or winter meal. It is easy to make and can be made ahead of time, making it a great option for busy weeknights. The roasted squash gives the casserole a sweet and slightly nutty flavor, while the cheese and bread crumbs add a creamy and crunchy texture. This casserole is sure to be a hit with your family and friends.
