Time 1h10m

Number Of Ingredients 7

½ tablespoon butter (for pan)
4 large eggs
½ cup honey (real or sugar-free*)
1 tablespoon vanilla extract
1½ cups blanched finely ground almond flour ((6 oz)**)
1/4 teaspoon salt
½ teaspoon baking soda***

Steps:

  • Preheat your oven to 350 degrees F. Generously grease an 8-inch nonstick cake pan with soft butter.
  • In a large bowl, lightly whisk the eggs. One by one, gradually whisk in the honey, vanilla, almond flour, kosher salt, and baking soda. Don't over mix the batter - overworked batter can cause the middle of the cake to collapse as it cools.
  • Use a spatula to transfer the batter into the prepared pan.
  • Bake until fragrant and set and a toothpick inserted in center comes out clean, 22-25 minutes.
  • Cool the cake, in the pan on a cooling rack, for 10 minutes. Then invert it onto the cooling rack and cool for 20 more minutes before slicing and serving.

Time P1DT2h10m

Yield 10

Number Of Ingredients 8

5 egg yolks
⅔ cup white sugar
½ cup heavy cream
⅔ cup butter
5 egg whites
1 ⅔ cups confectioners' sugar
1 teaspoon baking powder
2 cups almond meal

Steps:

  • In a saucepan over low heat, or in a metal bowl set over a pan of simmering water, whisk together the egg yolks and sugar. Stir in the heavy cream. Cook and stir until the mixture is very thick: a few drops dribbled onto the surface should be visible. Remove from heat, and stir in the butter until completely incorporated. Place a sheet of plastic wrap directly on the surface, and refrigerate overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9-inch springform pan.
  • In a glass or metal bowl, whip egg whites with an electric mixer until it is able to hold a firm peak. In a separate bowl, stir together the ground almonds, baking powder, and confectioners' sugar. Using a whisk or rubber spatula, fold 1/3 of the egg whites into the almond mixture to lighten; fold in the remaining egg whites until well blended. Pour the batter into the prepared pan.
  • Bake for 30 minutes in the preheated oven, until the top of the cake springs back when pressed lightly. Cool cake, then remove from the pan. Spread the glaze on top, and serve.

Tips:

  • Choose the right almond flour: Use finely ground blanched almond flour for a smooth,细腻的口感. If you use almond meal, your cake may be grainy.
  • Measure your ingredients accurately: Almond flour can absorb more liquid than other flours, so it's important to measure your ingredients carefully. Too much liquid will make your cake dense and gummy.
  • Don't overmix the batter: Overmixing the batter will develop the gluten in the almond flour and make your cake tough. Mix just until the ingredients are combined.
  • Bake the cake until a toothpick inserted into the center comes out clean: Almond flour cakes tend to brown quickly, so watch them closely towards the end of baking.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.

Conclusion:

Almond flour cakes are a delicious and versatile treat that can be enjoyed by people with and without dietary restrictions. With a little planning and care, you can create a moist, fluffy almond flour cake that everyone will love. Whether you're looking for a gluten-free, low-carb, or keto-friendly dessert, there's an almond flour cake recipe out there for you. So get baking and enjoy!
