4 large eggs

2 tablespoons amaretto liqueur
1 1/2 cups walnuts
Powdered sugar, for garnish

Steps:

  • Preheat oven to 350 degrees F.

4-1/4 cups crushed peeled apricots, (about 2-1/2 pounds)
1/4 cup lemon juice
6-1/4 cups sugar, divided
1 package (1-3/4 ounces) powdered fruit pectin
1/2 teaspoon unsalted butter, optional
1/3 cup amaretto

Steps:

  • In a Dutch oven, combine apricots and lemon juice. In a small bowl, combine 1/4 cup sugar and pectin; stir into apricot mixture. If desired, add butter. Bring to a full rolling boil over medium-high heat, stirring constantly. Gradually stir in remaining sugar. Return to a full rolling boil, stirring constantly, for 1 minute., Remove from heat; stir in amaretto. Cool jam in Dutch oven for 5 minutes, stirring occasionally. Ladle hot mixture into eight hot sterilized half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. 1/4 cup mocha-flavored international instant coffee mix (from 8-oz container)
1 2/3 cups Gold Medal™ all-purpose flour
3 teaspoons vanilla
1/8 teaspoon salt

Steps:

  • In small bowl, soak chopped walnuts in amaretto 4 to 6 hours. Drain, discarding amaretto. Set walnuts aside.
  • Heat oven to 350°F. Line 13x9-inch pan with foil; spray foil with cooking spray. In 1-quart heavy saucepan, melt butter and chocolate over low heat, stirring frequently. Remove from heat.
  • In large bowl, beat eggs, sugar and coffee mix with electric mixer on medium-high speed 8 minutes. On low speed, gradually beat in chocolate mixture until blended. Gradually add flour, vanilla and salt, beating until blended. Stir in reserved soaked walnuts. Pour batter into pan.
  • Bake 30 to 35 minutes. Cool completely in pan on cooling rack. Cut into 5 rows by 3 rows.

6 oz dried apricots (1 cup; preferably California)
1/2 cup walnuts (2 ounces), finely chopped
Pierogi and vareniki dough
1 stick (1/2 cup) unsalted butter
1/2 cup fresh bread crumbs
1/4 teaspoon cinnamon

  • Make filling:
  • Bring water and 1/4 cup sugar to a boil, stirring until sugar is dissolved. Remove from heat and stir in brandy. Finely chop apricots in a food processor, then add sugar syrup and pulse until just combined (do not purée). Transfer to a bowl and stir in 1/4 cup walnuts. Cool.
  • Roll out dough and fill varenikis:
