Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 10

2 lbs sweet potatoes
3/4 cup sugar
2/3 cup buttermilk
1/2 cup butter, softened
2 eggs
2 tablespoons Amaretto
1 1/4 teaspoons vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
2/3 cup chopped pecans

Steps:

  • In a large saucepan, cover sweet potatoes with water. Boil until tender; drain.
  • Remove the skins from the sweet potatoes and arrange them in a greased 2 quart baking dish.
  • Process the sugar, buttermilk, butter, eggs, amaretto, vanilla, cinnamon, and baking soda in a blender until smooth. Stir in pecans.
  • Spoon pecan mixture over sweet potatoes. Bake at 350 degrees for 30 minutes.

Tips:

  • Choose the right yams: Look for medium-sized yams that are firm and have smooth skin. Avoid yams that have blemishes or bruises.
  • Peel and cut the yams evenly: This will help them cook evenly. If the yams are too thick, they may not cook through.
  • Don't overcrowd the pan: When roasting the yams, make sure to leave enough space between them so that they can brown evenly.
  • Use a high oven temperature: This will help the yams to caramelize and get crispy on the outside.
  • Add flavorings: You can add a variety of flavorings to the yams, such as brown sugar, maple syrup, cinnamon, nutmeg, or ginger. Get creative and experiment with different combinations.
  • Serve immediately: Amaretto yams are best served hot and fresh out of the oven. They can be enjoyed as a side dish or as a main course.
