Swedish Angel Crisps image

This recipe came from my great grandmother's family who came from Sweden somewhere near the end of the last century. NOTE: You can also add 1/3 cup unsweetened cocoa to this recipe. It makes the cookies taste like brownie cookies.

Tips:

  • Choose the right potatoes: Use starchy potatoes like Russet or Idaho potatoes, as they hold their shape well during frying.
  • Cut the potatoes evenly: To ensure even cooking, cut the potatoes into uniform slices or wedges.
  • Soak the potatoes: Soaking the potatoes in cold water for 30 minutes helps remove excess starch, resulting in crispier fries.
  • Dry the potatoes thoroughly: Before frying, pat the potatoes dry with a clean kitchen towel to remove excess moisture, which can cause splattering and uneven cooking.
  • Use the right oil: Choose an oil with a high smoke point, such as canola, vegetable, or peanut oil, to prevent burning.
  • Fry the potatoes in batches: Avoid overcrowding the pan, as this can lower the oil temperature and result in soggy fries.
  • Season the fries: After frying, immediately season the fries with salt and other desired seasonings while they're still hot.
