1 cup packed light brown sugar (200 grams)
1/2 cup butter, softened (salted) (114 grams)
1 1/2 cups crunchy peanut butter
1 tablespoon light corn syrup (such as Karo)
3 eggs
1/2 teaspoon vanilla extract
4 1/2 cups old-fashioned rolled oats
2 teaspoons baking soda
1 cup dark chocolate chips
2/3 cup M&M's candies

Steps:

  • Preheat oven to 325 degrees F. Line two baking sheets with nonstick foil or parchment paper.
  • In a large bowl, using an electric mixer, beat sugars, butter, peanut butter and corn syrup on high speed until creamy. Beat in eggs 1 at a time. Beat in vanilla extract.
  • In a separate bowl, mix together oats and baking soda. Stir into peanut butter mixture until combined. Mix in chocolate chips and M&M's.
  • Using about a 1/4 cup measure, drop dough onto baking sheets spacing at least 3 inches apart. Alternatively, you can shape the dough mounds, put on a plate, then cover and chill. This way you can bake when needed.
  • Bake at 325 degrees F for 18 minutes or until lightly browned. Cool 2 minutes, then transfer cookies to a wire rack to cool completely.

2 3/4 cups all-purpose flour (see Cook's Note)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 1/2 sticks (1 1/4 cup) unsalted butter, softened
1 3/4 cup packed dark brown sugar
1/4 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
2 cups candy-coated chocolates, such as M&M's

Steps:

  • Sift the flour, baking powder, baking soda and salt into a large bowl.
  • Beat the butter, brown sugar and granulated sugar in a bowl with a mixer on medium-high speed until pale and fluffy, about 4 minutes. Beat in the eggs one at a time until smooth, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Reserve 1/4 cup of the chocolates, then stir in the remaining 1 3/4 cups of chocolates by hand. Press plastic wrap directly onto the surface of the dough and refrigerate until chilled through, about 1 hour.
  • Arrange the racks in the upper and lower third of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Roll the dough into 24 balls, each about 3 tablespoons (alternatively, use a #20 large cookie scoop). Place 6 dough balls on each of the prepared baking sheets; stud the top of each dough ball with some of the reserved chocolates. Bake 2 trays at a time until the cookies are golden around the edges but still soft in the middle, rotating the trays halfway through, 15 to 18 minutes. Remove from the oven and let cool 10 minutes on the baking sheets, then transfer to wire racks to cool completely. Repeat with the remaining dough and chocolates.

Steps:

  • For the meatloaf cakes: Heat oven to 350 degrees. In a large mixing bowl, combine the ground beef, crumbled bread or bread crumbs, egg, onion, lemon juice and seasoned salt. Mix lightly but thoroughly and shape into six small loaves. Space evenly on a baking sheet and bake for 15 minutes; meanwhile, prepare the sauce.
  • For the sauce: In a small bowl, mix together the ketchup, brown sugar, mustard, cloves and allspice. Continue to bake until the meatloaf cakes are 165 degrees in the center when tested with an instant-read thermometer, about 20 more minutes.
