1 pastry for single-crust pie
1 (15 ounce) can pumpkin puree
½ cup rice milk
6 large egg whites
¾ cup packed brown sugar
3 tablespoons molasses
4 teaspoons canola oil
1 tablespoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 10-inch pie plate with pie crust.

My great grandmother from England always made the best pumpkin pie, and the recipe has been passed along in the family for generations. When I became lactose intolerant, I was depressed by the notion that I would no longer be able to enjoy the pie at Thanksgiving because the original recipe was loaded with dairy. After a lot of experimentation and testing, I successfully converted the family recipe to a dairy free version I can enjoy, while maintaining the flavor and consistency of the pie that has made it such a hit. Family members who have tasted this new version were unable to tell a difference.

1 1/2 cups canned solid-pack pumpkin
3/4 cup soft silken tofu
1/4 cup honey
1/4 cup vanilla-flavored soymilk
3/4 cup light brown sugar
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon lemon extract
2 teaspoons fleischmans unsalted margarine
2 egg yolks
1 egg white (stiffly beaten)
1 deep dish pie shell

Steps:

  • In a blender, combine the silken tofu and honey until smooth, adding small quantities of soy milk until mixture has the consistency of sweetened condensed milk.
  • Combine pumpkin, tofu mixture, sugar, salt, butter, and spices in a sauce pan. Stir over medium heat until margarine has completely melted.
  • Add egg yolks to mixture and blend well.

This crustless pumpkin pie might just be the easiest you'll ever make. Simply blend the ingredients together, pour into your pie pan, and bake!

1 (15-ounce) can coconut milk (I recommend full-fat for a richer pie, but lite also works)
1 cup pumpkin puree
4 large eggs
1/2 cup granulated sugar
1 tablespoon pure vanilla extract
1/2 cup all-purpose flour (or your favorite cup-for-cup gluten-free flour blend*)
1 teaspoon baking powder
1 tablespoon pumpkin pie spice
1/2 teaspoon fine-grain sea salt or table salt
Coconut whipped cream (for serving**)

Steps:

  • Preheat oven to 375 degrees Fahrenheit and position rack in the middle of the oven. Spray a 9- or 10-inch pie pan with baking spray or oil the pan with coconut oil or vegan butter.
  • Add the coconut milk, pumpkin, eggs, sugar, and vanilla to the pitcher of a blender. Blend until combined, about 20 seconds. Add the flour, baking powder, pumpkin pie spice, and salt. Blend again until well-combined, another 20 seconds.
  • Pour filling into the pie plate. The mixture will be fairly runny. Carefully transfer to the preheated oven.

1 (15 ounce) can pumpkin puree (not pumpin pie filling)
11 ounces soymilk
2 large eggs (plus)
1 large egg white
1 teaspoon cornstarch
3/4 cup white sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/4-1/2 teaspoon ginger
1/4 teaspoon clove (I like to go light on the cloves)

Steps:

  • Put first 4 ingerdients in a blender and blend together.
  • Mix dry ingredients together in a bowl and then add to blender.

  • Pour into a 9-inch unbaked pie shell.
  • Bake in preheated oven at 425 degrees for 15 minutes. Then turn down
