GRANDMA'S FRESH APPLE CAKE

Grandma's Fresh Apple Cake image

Moist cinnamon cake enfolding sliced fresh apples makes a delicious dessert or wholesome snack cake. This recipe came from my mother, Ann. I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.

GRANDMA'S APPLE CAKE

Grandma's Apple Cake image

This was a massive hit when i was growing up. My grandma would make this weekly and as visitors called she would have orders to make her guests a cake for the following week. She served it with custard, vanilla ice cream or fresh cream and all were equally delicious! This was a great cake to eat during the winter served hot with custard. I have now started to add a handful of flaked almonds, sprinkled on top of the cake (just before it goes in the oven) The addition of the flaked almonds, seems to be an even bigger hit! Enjoy!

GRANDMA'S APPLE CAKE

Grandma's apple cake image

A classic one here. A simple, fuss free, easy apple cake. Basically you just need to stir the ingredients together and pop some apples on top. You can dust it with vanilla icing sugar when it has cooled down if you like.

Provided by alida1

Time 1h

Yield Serves 8

Number Of Ingredients 13

200 g flour
50 g cornflour
2 eggs
the juice and the zest of one organic lemon
2 tsp of raising agent
125 g sugar
120 g butter
a pinch of salt
2 tbsp milk
1 tsp vanilla essence
3 apples
2 tbsp apricot jam
1 tbsp hot water

Steps:

  • Pre-heat the oven at 180 C.
  • In a bowl work the butter to a creamy consistency (an electric mixer would make it easier). Gradually add the sugar, eggs, vanilla essence, salt, juice and zest of the lemon. Incorporate well then add the flour, the cornflour and the raising agent. Stir well and add the milk.
  • You should get a mixture which falls heavily from the spoon, not to runny, not too thick.
  • Pour it all in a round cake tin.
  • Peel and slice the apples into quarters, scrape them with a fork and lay them on the cake.
  • Put the cake on the lower rack of the oven and cook for about 45 minutes.
  • Switch the oven off, take the cake out but leave the oven door shut.
  • Stir the jam with the hot water and when the cake is cooked spread it all over it and put it back into the hot oven for 5-10 minutes.

Tips:

  • Choose the right apples: For the best flavor and texture, use a variety of apples that are tart and sweet, such as Granny Smith, Honeycrisp, or Pink Lady.
  • Don't overmix the batter: Overmixing can make the cake tough, so be careful not to overmix the batter once you've added the flour.
  • Use fresh ingredients: The fresher the ingredients, the better the cake will taste. If possible, use fresh apples, eggs, and butter.
  • Bake the cake until a toothpick inserted into the center comes out clean: This is the best way to tell if the cake is done baking.
  • Let the cake cool completely before serving: This will help the cake to set and make it easier to slice.

Conclusion:

Apple cake is a classic dessert that is perfect for any occasion. It's easy to make and always a crowd-pleaser. With a few simple tips, you can make the best apple cake ever. So next time you're looking for a delicious and easy dessert, give this recipe a try.
