2 large eggs, room temperature
1/2 cup unsweetened applesauce
2 tablespoons canola oil
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
3/4 teaspoon salt
6 cups chopped peeled tart apples
1/2 cup chopped pecans
FROSTING:
4 ounces reduced-fat cream cheese
2 tablespoons butter, softened
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended. In another bowl, whisk flour, baking soda, cinnamon and salt; gradually beat into sugar mixture. Fold in apples and pecans., Transfer to prepared pan. Bake 35-40 minutes or until top is golden brown and a toothpick inserted in center comes out clean. 3 eggs

5 cups apples
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees.

  • Peel and slice the apples. Slices can be 1/8 of an inch or so.

2 cups white sugar
1 cup vegetable oil
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda

1 cup chopped walnuts or 1 cup pecans
3 cups diced apples
1 cup raisins (optional)
1 (8 ounce) package cream cheese, softened
1/4 cup butter, melted
2 cups confectioners' sugar
1 teaspoon lemon juice
1 lemon, zest from (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 9x13 inch pan. Spread apples evenly over the bottom of the pan.
  • Beat eggs with mixer until thick and light. Combine sugar and oil and add to eggs.
