1 cup washed hulled strawberry
1 medium tart apple, peeled and diced
2 tablespoons liquid honey or 2 tablespoons brown sugar

Steps:

  • For the Cinnamon Chips: Brush tortillas lightly with water; sprinkle with sugar and cinnamon.
  • Cut into wedges.

1 1/2 cups sugar
2 to 3 lemons, juiced
2 small apples, preferably a crisp, flavorful variety like Royal Gala or Winesap, washed and dried

Steps:

  • In a small pot, combine the water and sugar and bring to a gentle boil over medium heat. Set aside to cool.
  • Place the apples on a flat surface. Using a mandoline or sharp knife, cut each one, placing the core end of the apple in front of the blade, into rounds as thin as you can manage. Remove any seeds as you cut and sprinkle them with lemon juice. Submerge the apple slices in the syrup and allow them to "rest" for a few hours or, even better, overnight.
  • Preheat the oven to 200 degrees F.
  • Remove some of the apples from the syrup and lightly dry them on a kitchen towel. Place them in a single layer on a baking sheet with parchment or on a tray fitted with a baking rack. Note: you may want to place something heavy, like a metal spoon, at each end of the paper to prevent the paper from folding over as the chips bake. Bake in the oven until crispy, about 1 hour.

While making a large pot of applesauce, I chose not to discard the nutrient-rich peels but instead bake them into apple chips. It turned out to be an deliciously successful experiment. These apple chips are lightly sprinkled with cinnamon-sugar and oven-dried on parchment paper. To ensure even drying, it's important to make sure the peels are of equal/uniform thickness. Thicker peels will take longer to dry, and you need them to be completely dry for food safety reasons. For best results, use a counter-mounted spiral apple peeler; or just keep an even hand while peeling your apples. My family enjoyed these crispy treats, and I hope yours does too!

1 red Gala apple
One 6-ounce Granny Smith apple

3 tablespoons pure maple syrup
1/2 teaspoon vanilla extract

Steps:

  • For the chips: Place 1 rack at the top and 1 at the bottom position and preheat the oven to 300 degrees F. Line 2 large heavy baking sheets with parchment paper. Lightly coat the parchment with nonstick spray.
  • For the topping: In a small bowl, stir the sugar, cinnamon and salt until blended.
  • For the apple chips: Stand each apple upright. Cut 1/4 inch vertically off the right and left sides of each apple. Set the mandoline or v-slicer for cutting 1/16-inch-thick slices. 4 granny smith apples, sliced with the pampered chief apple peeler corer slicer then cut in half so you have thin slice
1/4-1/2 teaspoon cardamom seed (I just love cardamon but you can skip or cut it down to 1/4 teaspoon)
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/2 fresh nutmeg, ground
5 teaspoons sugar

Steps:

  • Put cardamon in a coffee grinder (Used for spices not coffee. Grind till fine add rest of the sugar and spices give a couple of whirls to mix into a fine powder).
  • Lay parchment paper on 2 cookie sheet pans.
  • In a storage bag add spices and apples toss gently to coat, shaking excess spices off place on parchment in a single layer. You can sprinkle a little extra sugar on the slices this is optional.

1 Granny Smith or Ida Red apple, peel on
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 175 degrees. In a medium saucepan over medium heat, bring sugar and 1 cup water to a simmer, stirring occasionally. Meanwhile, slice apple lengthwise into 1/16-inch thick slices using a mandoline, continuing to the core. Turn, and slice the other side of apple; discard core.
  • When sugar has completely dissolved, place 5 or 6 slices of apple into the sugar syrup and simmer for 20 seconds. Using a slotted spoon, transfer slices to a wire rack to drain. Repeat process with remaining apple slices.
