1/2 cup quick cooking steel cut oats, regular old fashioned oats may be used as well
1/3 cup brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda

1/4 teaspoon ground ginger
1/4 teaspoon kosher salt
1 tablespoon unsalted butter, melted
1/2 cup low fat buttermilk
1/2 cup unsweetened applesauce
3 tablespoons plain non-fat Greek yogurt
1 egg
1 apple, shredded and patted dry with paper towels
3 tablespoons granulated sugar
1/4-1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Spray an 8x8 baking pan with cooking spray, then coat the inside of the pan lightly with flour.
  • In a large bowl whisk together all of the dry ingredients.
  • In a smaller bowl whisk together the wet ingredients.
  • Pour the wet ingredients in with the dry and fold together until almost combined.
  • Add in the shredded apple and continue to fold together until you no longer see streaks of flour.
  • Pour the batter into the prepared 8x8 baking pan.
  • In a small bowl whisk together the cinnamon sugar topping then sprinkle it evenly all over the top of the cake batter.
  • Place the cake on the middle rack of the oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

1 large apple, diced very small
1 Tbsp coconut sugar or brown sugar
1 1/2 tsp cinnamon, divided
1 cup unsweetened applesauce
1 large egg
6 Tbsp avocado or vegetable oil
1/4 cup honey or maple syrup
1/2 cup milk (any kind)
2 tsp vanilla extract
1 1/2 cups "quick" (instant) oats (not regular rolled oats, see note above for sub)
1 cup whole wheat flour (all-purpose or gluten-free blend)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Steps:

  • Preheat oven to 350 degree. Grease a 9-inch square cake pan then line partially with parchment paper (This just makes it easier to remove from the pan but you can skip that step if you'd prefer.)
  • Add diced apple, coconut sugar, and a 1/4 tsp of cinnamon to a bowl then mix to combine. Set aside.
  • In a large bowl, whisk together applesauce, egg, oil, honey or maple syrup, milk, and vanilla. Using a spoon or rubber spatual, stir in the remaining 1 1/4 tsp cinnamon and the rest of the dry ingredients. Mix until just combined then stir in the diced apple mixture.
  • Spread cake batter evenly in your prepared pan and sprinkle on a pinch of extra oats, if you'd like. Bake until golden brown around the edges and a toothpick inserted into the center of the pan comes out clean, 25 to 30 minutes.

2/3 cup brown sugar
2 teaspoons ground cinnamon
1 cup (2 sticks) butter, at room temperature
1 1/2 cups granulated sugar
2 large eggs
3 teaspoons vanilla extract
3 cups all-purpose flour
3 1/2 teaspoons baking powder
1 cup milk, at room temperature
2 apples, peeled and finely chopped
1/4 cup (4 tablespoons) unsalted butter, at room temperature
1 cup confectioners' sugar
2 teaspoons ground cinnamon
1/4 teaspoon vanilla extract
1 to 2 tablespoons heavy whipping cream
Caramel, for drizzling (about 6 tablespoons)

Steps:

  • For the apple cinnamon cake: Preheat the oven to 350 degrees F. Spray two 8-inch round cake pans with baking spray or line with parchment.
  • Mix the brown sugar and cinnamon together in a bowl. Set aside.
  • Beat the butter and granulated sugar together in the bowl of a stand mixer fitted with the paddle attachment until smooth and creamy. Beat in the eggs, 1 at a time, until incorporated.

  • Bake until a toothpick inserted in the center of the cakes comes out clean, 30 to 40 minutes. Cool the cakes slightly, then invert them onto a rack to cool completely.
  • For the cinnamon buttercream: Add the butter, confectioners' sugar, cinnamon, vanilla and 1 tablespoon heavy cream to the bowl of a stand mixer fitted with the paddle attachment. Turn the mixer on slow to incorporate all the ingredients. If the frosting seems too thick, add the remaining tablespoon heavy cream. Turn the mixer on high and beat until the frosting is lighter and fluffier, 1 to 2 minutes. (You want the frosting to be a spreadable consistency.)
  • To assemble the cake: place the first layer of cake on a cake stand. Drizzle with up to 3 tablespoons of caramel. Spread the top of the layer with all of the frosting. Place the other cake layer on top and drizzle with up to 3 tablespoons of caramel. Serve immediately.
  • The cake keeps, covered in the refrigerator, for up to 3 days.
