Number Of Ingredients 7

1 cup butter, softened
8 ounces cream cheese
2 1/2 cups flour
4 large green apples, finely chopped
1 cup sugar
2 teaspoons cinnamon or 2 teaspoons apple pie spice
1/4 cup flour

Steps:

  • Cream together the butter and cream cheese. Gradually add flour. It should form a moist dough. Portion into approximately teaspoon balls into mini muffin tin. Flatten to fit tin. (I really, really recommend the Pampered Chef mini tin and especially the wooden mini tart shaper. It makes this process super fast.)
  • In a medium sauce pan combine apples, sugar, and cinnamon. Cook for 5-7 minutes until the apple begin to soften. Add flour and mixture will thicken slightly.
  • Add filling with a spoon to each tart shell and avoid apples overflowing sides of pan. (they will stick to the pan and make it harder to release the tarts.
  • Bake at 400 degrees for 20-22 minutes. Let rest for a couple minutes and release with a teaspoon. You can either drizzle them with a caramel sauce, dust with powdered sugar or you could even top with a crumb topping prior to baking.

Mini Apple Pies with Pillsbury® Crust image

These mini apple pies are perfect for sharing! I prefer to use a homemade pie crust, but for convenience sake it's ok to use ready-made pie dough.

Time 3h15m

Yield 6

Number Of Ingredients 9

2 tablespoons butter
¼ cup flour
6 Pink Lady apples - peeled, cored, and sliced
¼ cup apple juice
⅓ cup white sugar
⅓ cup brown sugar
1 tablespoon lemon juice
½ teaspoon ground cinnamon
1 (15 ounce) package refrigerated pie crust (such as Pillsbury®)

Steps:

  • Melt butter in a saucepan over medium heat. Whisk in flour until no lumps remain. Add apples, apple juice, sugar, brown sugar, lemon juice, and cinnamon. Cook over medium heat for 5 to 7 minutes, stirring occasionally.
  • Meanwhile, preheat the oven to 425 degrees F (220 degrees C).
  • Trim 4 circles from the pie crust; allow enough dough to fit the tin and be able to crimp and seal top and bottom crusts. Press 1 dough circle into the bottom of each of 2 mini pie tins. Add filling. Drape top crusts over filling. Wrap excess top crusts under bottom crusts edges, pressing edges together to seal. Flute the edges and cut slits in the top crusts.
  • Bake in the preheated oven for 15 minutes. Cover edges of crusts with strips of aluminum foil to prevent burning. Continue baking until apples are tender and crusts are golden brown, 25 to 30 minutes more.
  • Cool pies on rack at least 2 hours before serving.

  • If you don't have a tassie pan, you can use a muffin pan instead. Just be sure to grease the muffin cups well so that the tassies don't stick.
  • To make the tassies ahead of time, bake them according to the recipe and then let them cool completely. Store the tassies in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.
  • When you're ready to serve the tassies, simply reheat them in a preheated oven at 350 degrees Fahrenheit for 10-15 minutes, or until they're warmed through.
