WALDORF SALAD

Waldorf Salad image

This simple apple salad got its name from the luxurious Waldorf-Astoria Hotel in New York. Invented in 1896 not by a chef but by the maître d'hôtel Oscar Tschirky, the Waldorf salad was an instant success. As often happens, many variations evolved-some with raisins, some with chopped nuts. This one has green apples and red seedless grapes.

Time 15m

Number Of Ingredients 15

3 tablespoons mayonnaise* (See Notes)
2 tablespoons plain Greek yogurt (or plain regular yogurt or sour cream)
2 teaspoons granulated sugar (or honey)
Lemon zest, optional
1 tablespoon lemon juice
1/2 teaspoon poppy seeds, optional
1 1/2 cups apples, cored and diced (don't peel)** (See Notes)
1 1/2 cup seedless grapes, halved*** (See Notes)
1 cup diced pineapple, optional (canned or fresh; drain juice well if using canned)
1 cup celery ribs, diced in thin 1/4-inch segments
1 cup walnuts, divided**** (See Notes)
Kosher salt, optional and to taste
1/4 cup fresh parsley, finely minced; optional
1 teaspoon lemon zest, optional and to taste for garnishing
Bibb lettuce (or butter lettuce), optional for serving

Steps:

  • To a medium bowl, add the mayo, Greek yogurt, sugar, lemon juice (make sure to zest the lemon before juicing it and reserve the zest if you're going to garnish your salad with the zest later), optional poppy seeds, and whisk to combine until smooth; set aside.
  • To a separate large bowl, add the apples, grapes, optional pineapple, celery, half the nuts, evenly drizzle the dressing over the top, and stir and toss to combine and coat evenly.
  • Taste and if desired, add salt, to taste. I recommend adding some to balance the sweetness in this salad.
  • Evenly sprinkle the remaining half of the nuts over the top.
  • Optionally and evenly sprinkle the parsley and optional lemon zest to garnish.
  • Optionally plate the salad in large leaves of Bibb lettuce (or butter lettuce will work) or simply serve family-style out of the mixing bowl, or plate on individual salad plates, minus the bed of lettuce underneath.
  • Salad is best fresh but can be made up to 4 hours ahead of time.***** (See Notes)

SWEET TART WALDORF APPLE SALAD

Sweet Tart Waldorf Apple Salad image

This salad is a combination of a fruit dip recipe I learned last week and an apple salad I saw in the grocery store. It was enough inspiration to come up with this delicious recipe for our cook-out this afternoon! I have two boys and a daycare and would recommend this recipe as super-simple to make with kids. Children love chopping apples (even littles can do this with a butter knife) and mixing the dressing. I used ¾ of my dressing and reserved the rest to use as fruit dip later.

¼ cup mayonnaise
1 teaspoon vanilla extract
2 cups seedless green grapes, halved
3 stalks celery, thinly sliced
1 ½ cups walnut halves
1 cup sweetened dried cranberries (such as Craisins®)

Steps:

  • Toss diced apples with lemon juice in a salad bowl.

Tips:

  • Choose the right apples: For a classic Waldorf salad, use a sweet and crisp apple variety like Honeycrisp, Granny Smith, or Braeburn. If you prefer a milder flavor, try Gala or Fuji apples.
  • Make sure the celery is fresh and crisp: Limp celery will ruin the texture of your salad. Look for celery that is bright green and has no brown spots.
  • Don't overmix the salad: Waldorf salad is best when the ingredients are just combined. Overmixing will make the salad mushy.
  • Chill the salad before serving: This will help the flavors to meld and make the salad more refreshing.
  • Serve Waldorf salad with a variety of toppings: Some popular options include chopped walnuts, dried cranberries, crumbled blue cheese, or a drizzle of honey.

Conclusion:

Waldorf salad is a classic for a reason. It's a refreshing, crunchy, and flavorful salad that's perfect for any occasion. With its simple ingredients and endless variations, Waldorf salad is a versatile dish that can be enjoyed by everyone. So next time you're looking for a healthy and delicious salad, give Waldorf salad a try. You won't be disappointed!
