It was enough inspiration to come up with this delicious recipe for our cook-out this afternoon! I have two boys and a daycare and would recommend this recipe as super-simple to make with kids. Children love chopping apples (even littles can do this with a butter knife) and mixing the dressing. I used ¾ of my dressing and reserved the rest to use as fruit dip later.

2 yellow apples, diced
1 tablespoon lemon juice, or more to taste
1 (3 ounce) package Neufchatel cheese, softened
¾ cup whipped cream
¼ cup brown sugar

2 cups seedless green grapes, halved
3 stalks celery, thinly sliced
1 ½ cups walnut halves
1 cup sweetened dried cranberries (such as Craisins®)

2 c shredded carrot
1 1/2 c chopped red delicious apple or your favorite apple
1 c thinly sliced celery
1/4 c pitted chopped dates
1/4 c plain nonfat or lowfat yogurt
1/4 c nonfat or lowfat mayonnaise
2 Tbsp unsweetened orange juice
1 tsp grated lemon rind
spinach leaves (optional)
dried cranberries, as many as you would like (optional)

Steps:

  • 1. Combine first 4 ingredients, in a medium bowl. Combine yogurt, mayonnaise, orange juice, and lemon rind; stir well. Pour over carrot mixture; toss gently. Cover, and chill at least 1 hour.
