Time 30m

Yield 1 doughnut, 18 serving(s)

Number Of Ingredients 10

3 1/3 cups all-purpose flour
1 cup applesauce
3/4 cup sugar
2 tablespoons shortening
3 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 eggs
vegetable oil, for frying
cinnamon-sugar mixture

Steps:

  • Beat 1-1/3 cups of the flour and remaining ingredients (except oil and cinnamon/sugar mixture)with an electric mixer on low speed, until just blended.
  • Stir in remaining flour and beat on medium speed for an additional 2 minutes.
  • Cover dough and refrigerate for about 1 hour (dough should be stiff after refrigeration).
  • Heat 2 to 3 inches of vegetable oil in a fryer or heavy (3 quart) saucepan to 375°F (for perfect doughnuts use a themometer).
  • Divide dough in half and roll each half out on a well floured pastry board to 3/8" thick. Cut with a well floured doughnut cutter, or use a 3" cup and a clean pop bottle lid for the center.
  • Carefully slide cut doughnuts into hot oil, using a wide spatula. Cook 2 or 3 doughnuts at a time, so as not to lower the tempeture of the oil too much. Fry 1 to 1-1/2 minutes on each side or until golden brown.
  • Carefully remove from the oil (do not prick) and drain on papertowels.
  • If desired, sprinkle with cinnamon/sugar mixture while still hot.

APPLEJACK DONUTS

Applejack Donuts image

When I was little, my Dad would do my Mom a favor and run to the local bakery and pick up donuts and pastries for the kids so she wouldn't have to deal with breakfast; did he ever think about the sugar rush? Never mind; the teachers had to deal with that! The bakery he went to served donuts they called applejacks, and I always loved them way more than the chocolate covered cream filled yeast donuts! They also served superb bear claws and apple fritters! This is as close as I can come to their "applejack" recipe. They were always still warm when we got them from Daddy's truck into our stomachs! Yummy breakfast treats for weekends or vacations!

APPLE 'DOUGHNUTS'

Apple 'doughnuts' image

Make these doughnut-style apple rings for a picnic with the kids. Children will love helping to make, decorate and eat these fruity treats, and there's no cooking required

Provided by Cassie Best

Categories     Lunch, Snack

Time 20m

Yield Makes 15

Number Of Ingredients 5

150g soft cheese
2 tsp honey
3 apples (use a crunchy eating variety)
3-4 tbsp almond or peanut butter (optional)
coloured sprinkles , to decorate

Steps:

  • Mix the soft cheese with the honey and set aside. Peel the apples, then slice each through the core into five or six rings, about 1cm thick. Use an apple corer or small round biscuit cutter to stamp out a circle from the middle of each slice, removing the core and creating 'doughnut' shapes. Pat the slices dry using kitchen paper - they should be as dry as possible to help the toppings stick.
  • Spread some nut butter over the slices, if using, then top with the sweetened soft cheese. Decorate with the sprinkles and serve.

APPLESAUCE DROP DOUGHNUTS

Applesauce Drop Doughnuts image

"I made these tasty cake doughnuts often when our children were growing up," says Frances Poste of Wall, South Dakota. "They're quick and easy."

Provided by Taste of Home

Time 45m

Yield about 5 dozen.

Number Of Ingredients 13

3 tablespoons butter, softened
3/4 cup sugar
3 eggs
1 cup applesauce
1 teaspoon vanilla extract
4-1/2 cups all-purpose flour
3-1/2 teaspoons baking powder
1 teaspoon salt
1/2 to 3/4 teaspoon ground cinnamon
1/4 to 1/2 teaspoon ground nutmeg
1/4 cup milk
Oil for deep-fat frying
Additional sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in applesauce and vanilla. Combine flour, baking powder, salt, cinnamon and nutmeg; gradually add to the creamed mixture alternately with milk (the batter will be thick). , In an electric skillet or deep-fat fryer, heat oil to 375°. Drop teaspoonfuls of batter a few at a time into hot oil. Fry until golden brown on both sides. Drain on paper towels; roll in sugar while warm.

Nutrition Facts :

Tips:

  • Use fresh apples. Fresh apples give applejack donuts their best flavor. If you can, use a variety of apples, such as Granny Smith, Honeycrisp, and Pink Lady.
  • Grate the apples finely. This will help them distribute evenly throughout the batter and prevent them from sinking to the bottom of the donuts.
  • Don't overmix the batter. Overmixing the batter will make the donuts tough. Just mix until the ingredients are combined.
  • Fry the donuts at the right temperature. The ideal temperature for frying applejack donuts is 375 degrees Fahrenheit. If the oil is too hot, the donuts will brown too quickly and be raw in the middle. If the oil is too cold, the donuts will absorb too much oil and be greasy.
  • Drain the donuts on paper towels. This will help remove excess oil from the donuts.
  • Serve the donuts warm. Applejack donuts are best enjoyed warm, right out of the fryer. You can also sprinkle them with cinnamon sugar or glaze them with a simple glaze made from powdered sugar and milk.

Conclusion:

Applejack donuts are a delicious and easy-to-make treat that are perfect for any occasion. With their moist crumb, sweet apple flavor, and crispy coating, they're sure to be a hit with everyone who tries them. So next time you're looking for a special breakfast or snack, give applejack donuts a try. You won't be disappointed!
