HORSERADISH PAN SAUCE

These sauces can be made in minutes as the cooked steaks rest. To make the sauce ahead, leave out the butter or cream. Reheat just before serving, adding water if the sauce has reduced too much, then whisk in the butter or cream. This amount is enough for four steaks, but the formulas can be recalculated if you're serving more guests.

PINK APPLESAUCE WITH HORSERADISH

Pink Applesauce with Horseradish image

Categories     Condiment/Spread     Garlic     Side     Quick & Easy     Low Sodium     Horseradish     Apple     Fall     Gourmet

Yield Makes about 1 3/4 cups

Number Of Ingredients 5

5 red apples such as McIntosh (about 1 1/2 pounds)
2 garlic cloves
1/2 cup sugar
2/3 cup water
1 tablespoon drained beet horseradish

Steps:

  • Cut apples into 1/2 inch chunks (do not peel) and in a heavy saucepan cook with garlic, sugar, and water, covered, over moderate heat, stirring occasionally, 20 minutes, or until apples are translucent and tender. Remove lid and cook mixture, stirring occasionally, about 10 minutes more, or until almost all liquid is evaporated.
  • Force apple mixture through a course sieve or food mill fitted with fine disk into a bowl, discarding solids, and stir in horseradish. Applesauce may be made 4 days ahead and chilled, covered.
  • Serve applesauce chilled or at room temperature with poultry or pork.

Tips:

  • Choose firm, crisp apples for your applesauce. This will help the sauce retain its shape and texture.
  • Peel and core your apples before cooking them. This will remove the skin and seeds, which can make the sauce bitter.
  • Cook the apples in a little bit of water or apple cider to prevent them from sticking to the pot.
  • Add sugar or honey to taste. You can also add other spices, such as cinnamon, nutmeg, or ginger, to taste.
  • Let the applesauce cool completely before adding the horseradish. This will prevent the horseradish from overpowering the applesauce.
  • Use fresh horseradish for the best flavor. You can find horseradish in the produce section of most grocery stores.
  • Grate the horseradish finely before adding it to the applesauce. This will help the horseradish distribute evenly throughout the sauce.
  • Start with a small amount of horseradish and add more to taste. Horseradish can be very spicy, so it's important to use it sparingly.
  • Serve the applesauce horseradish sauce immediately or store it in the refrigerator for later use.

Conclusion:

Applesauce horseradish sauce is a versatile condiment that can be used with a variety of dishes. It's perfect for grilled meats, fish, or poultry. It can also be used as a dipping sauce for vegetables or pretzels. The sweet and tangy flavor of the applesauce is complemented perfectly by the spicy kick of the horseradish. This sauce is sure to be a hit at your next party or gathering.
