APPLESAUCE-OATMEAL RAISIN CAKE
Steps:
- Bring the water to a boil in a medium-size saucepan over moderately high heat. Stir in the oats. When the liquid returns to a boil, stir in the raisins and salt. Reduce the heat and simmer 4 to 5 minutes, stirring occasionally, until the oats are soft and the water is absorbed. Remove from heat, stir in the sugar, applesauce, and oil. Cool to lukewarm. Meanwhile, heat the oven to 350 degrees, and grease the pan. Put the flour, baking soda, cinnamon, and nutmeg into a large bowl. Stir to mix well. Stir the eggs into the oat mixture. Add the flour mixture, and stir just until moistened. Spread in the prepared pan and bake 30 to 40 minutes, or until the cake starts to shrink from the sides of the pan and a wooden pick inserted in the center of the cake comes out clean. Place the pan on a wire rack to cool. The cake is good served warm. Or cool completely, cover tightly, and store overnight at room temperature before serving or freezing.

BLUEBERRY OATMEAL APPLESAUCE MUFFINS
These muffins are not only delicious, but very low in fat and heart-healthy. The oats and flaxseed meal add fiber and whole grains for a filling and delicious breakfast or snack, while the applesauce takes the place of egg, butter, or cream that you might find in other muffin recipes. You can make this recipe vegan by omitting the egg and using soymilk as a substitute for milk (I use Lactaid milk to make it dairy-free). To make it sugar-free, substituting Splenda for the small amount of sugar is just as good! A pecan half on top of the muffin adds a visually-appetizing touch while adding a slight crunch to a moist and filling muffin!

OATMEAL APPLESAUCE COOKIES
In 2005 I had back surgery. My Mom came for a week to watch the kids/take care of the house. She made these for the boys and they devoured them she said. I don't know how many these make. I know at least 3 dozen - so that is the amount I will put. Okay - I have tried at least 2 different times to edit this recipe on the directions. More than one person has wanted to make it so I will finish the directions here! :) Basically - mix all ingredients very well in large bowl. Drop by teaspoons onto greased cookie sheets. Bake at 375 degrees for 11 minutes. If you like them crunchy - let them bake a bit longer. Enjoy!

Tips:
- Use old-fashioned or rolled oats: These types of oats have a chewier texture and will hold their shape better in the oatmeal.
- Add water or milk, or a combination of both: The type of liquid you use will affect the consistency of the oatmeal. Water will produce a thinner oatmeal, while milk will make it creamier.
- Sweeten the oatmeal to your taste: You can use sugar, honey, maple syrup, or another sweetener of your choice.
- Add spices for extra flavor: Cinnamon, nutmeg, and ginger are all popular spices to add to oatmeal.
- Top the oatmeal with your favorite toppings: Some popular toppings include nuts, seeds, dried fruit, and yogurt.
