- Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper muffin liners. Whisk together 1 1/2 cups oatmeal, the flour, baking powder, baking soda, and 1/8 teaspoon of cinnamon in a mixing bowl; set aside.
- Whisk 1/2 cup brown sugar, egg white, applesauce, and milk together in a mixing bowl until smooth. Stir in the flour mixture until evenly moistened; it's ok if small, dry lumps remain. Pour the batter into the prepared muffin tin. Stir the 1/4 cup oatmeal, 1/4 cup brown sugar, 1 tablespoon cinnamon, and the melted butter in a small bowl; sprinkle this mixture over the muffins.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes. Cool at least 10 minutes before serving.

Steps:
- Heat oven to 400.
- Line 12 medium muffin tins with paper cups(optional)(spray muffin tin with cooking spray w/o paper cups).
- Combine oats, flour, cinnamon, baking powder and baking soda.
- Add applesauce, milk, brown sugar, oil and egg white.
- Mix just until dry ingredients are moistened.
- Fill muffin cups almost full.
- For topping combine remaining ingredients. Sprinkle evenly over batter.
- Bake 20-22 minutes until deep golden brown.
- Serve Warm.

- In a small bowl, combine all the struesel ingredients and stir until well combined and crumbly.
- Muffin-Tops:.
- Soak the oats in milk for about 30 minutes.
- Preheat the oven to 400 degrees.
- Spray muffin pan with cooking spray.
- Combine the applesauce with the egg.
- Mix the oat mixture with the applesauce mixture, and stir until combined.
- In a separate bowl measure and whisk the dry ingredients together.
- Add wet ingredients to dry and mix until just combined.
- Stir in raisins or craisins.
- Do not over mix the batter or the muffins will be tough.
- Spoon approximately 1/2 cup of muffin mixture into muffin-top pan.
- Sprinkle streusel on top.
- Bake until golden brown and the top springs back, approximately 15-20 minutes.
- Remove pan from the oven and allow to cool for 5 minutes before removing muffin-tops to wire rack to cool.
- Best served fresh from the oven.

- Mix all topping ingredients together by rubbing with fingers, set aside. (I got a little lazy and melted the butter, as a shortcut from having to soften my rock hard butter!) In a large bowl, mix your flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together your eggs, applesauce, oil, and vanilla. Mix it well.
