APRICOT WALNUT BALLS

Apricot Walnut Balls image

I have to be honest I have made this one time. The apricots are not my favorite fruit. They were good but just not to me. The photo was shared by Pat Durham. Thank you very much.

Provided by Zelda Hopkins

Categories     Candies

Time 10m

Number Of Ingredients 5

2 c dried apricots, finely chopped
2 1/2 c coconut, flaked
14 oz condensed milk
1 1/4 c chopped walnuts
1/2 c confectioners' sugar

Steps:

  • 1. Combine apricots and coconut. Add condensed milk, mix well. Stir in walnuts. Chill for 30 minutes [the mixture will be sticky]. Shape into 1 inch balls and roll in confectioners sugar. Cover and refrigerate at least 2 hours before serving. Makes 5-6 dozen.

Tips:

  • Choose ripe and firm apricots. Overripe or bruised apricots will not hold their shape well in the apricot balls.
  • Use a food processor or blender to finely chop the apricots. This will help the apricot balls to have a smooth texture.
  • Add sugar to taste. The amount of sugar you add will depend on the sweetness of the apricots and your personal preference.
  • Chill the apricot balls before serving. This will help them to set and firm up.
  • Roll the apricot balls in chopped nuts or coconut before serving. This will add extra flavor and texture.

Conclusion:

Apricot balls are a delicious and easy-to-make treat that can be enjoyed by people of all ages. They are a great way to use up ripe apricots and are a perfect snack for parties or potlucks. With a few simple ingredients and a little bit of time, you can create a delicious and healthy snack that everyone will love.
