Tips:

  • To make the arugula shine, choose tender, young leaves with a peppery flavor.
  • Pine nuts add a nutty flavor and a bit of crunch to the salad. If you don't have pine nuts, you can substitute walnuts or almonds.
  • Parmesan cheese adds a salty, umami flavor to the salad. You can use freshly grated Parmesan or pre-shredded Parmesan.
  • Lemon-tahini dressing is a light and flavorful dressing that complements the arugula, pine nuts, and Parmesan cheese. If you don't have tahini, you can substitute olive oil or Greek yogurt.
  • Serve the salad immediately after assembling. Arugula can wilt quickly, so it's best to enjoy it fresh.

Conclusion:

This arugula salad with pine nuts and Parmesan cheese is a delicious and easy-to-make salad that is perfect for a light lunch or dinner. With its peppery arugula, crunchy pine nuts, salty Parmesan cheese, and flavorful lemon-tahini dressing, this salad is sure to please everyone at the table.
