Yield 4

Number Of Ingredients 10

1/2 pound penne
1/4 cup and 1 teaspoon olive oil
1 bunch asparagus
1/2 cup water
3 tablespoons lemon juice
Grated rind of 1 lemon
Salt
Pepper
1 jarred red pepper, diced

This will help maintain the bright green color and stop the asparagus from cooking further. Toast pine nuts in oven until golden. Recipe found on a a bunch of asparagus purchased at the grocery store recently. Very easy to make. This recipe has been prepared twice now-first time with shallots, omitting the Parmesan cheese and the second time with red onion (use red onion if you want a more pronounced onion flavor and for added color). Can be served warm or at room temperature. Skip the cheese for a vegan version. From dole.com.

PINE NUT VINAIGRETTE

Pine Nut Vinaigrette image

Categories     Condiment/Spread     Sauce     Vegetarian     Quick & Easy     Salad Dressing     Vinegar     Lemon     Pine Nut     Vegan     Bon Appétit

Yield Makes about 1 1/3 cups

Number Of Ingredients 7

1/4 cup pine nuts
2/3 cup olive oil
1/4 cup balsamic vinegar or 2 tablespoons red wine vinegar
1/4 cup fresh lemon juice
3 tablespoons minced shallots (about 2)
1/2 teaspoon grated orange peel
Salt and pepper

Steps:

  • Preheat oven to 350°F. Place pine nuts on small cookie sheet. Toast until golden brown, stirring occasionally, about 12 minutes. Cool completely.
  • Combine oil, vinegar, lemon juice, shallot and orange peel in bowl. Season with salt and pepper. Stir in pine nuts. Transfer to cruet and seal. (Can be prepared up to 4 days ahead; refrigerate.) Serve at room temperature.

Tips:

  • Choose fresh asparagus: Look for spears that are bright green, firm, and have tightly closed tips.
  • Trim the asparagus properly: Snap off the woody ends of the asparagus spears. You can also use a sharp knife to cut off about 1 inch from the bottom of each spear.
  • Cook the asparagus until tender-crisp: Asparagus should be cooked until it is tender, but still has a slight crunch to it. Overcooked asparagus will be mushy.
  • Toast the pine nuts: Toasting the pine nuts will bring out their flavor and make them more fragrant.
  • Make the lemon vinaigrette ahead of time: The lemon vinaigrette can be made up to 2 days in advance. Store it in a jar or airtight container in the refrigerator.

Conclusion:

Asparagus with Toasted Pine Nuts and Lemon Vinaigrette is a simple, yet delicious dish that is perfect for a light lunch or dinner. The asparagus is tender-crisp, the pine nuts add a nutty flavor, and the lemon vinaigrette is tangy and refreshing. This dish is also very versatile and can be served as a side dish or a main course. This recipe is also a great way to use up leftover asparagus. If you have any leftover asparagus, simply roast it in the oven or sauté it in a pan with some olive oil and garlic. Then, toss the roasted or sautéed asparagus with the lemon vinaigrette and toasted pine nuts.
