1 teaspoon sugar
½ cup warm water
2 ounces cake yeast or 3 packets (6¾ teaspoons) active dry yeast
6 eggs
16 ounces sour cream
2 cups unsalted butter, melted and cooled
1 cup granulated sugar
1 teaspoon vanilla extract
½ teaspoon salt
9 to 10 cups grams all-purpose flour
3 pounds walnuts (finely ground)
3 cups granulated sugar
¾ cup unsalted butter, melted and cooled
¾ cup evaporated milk
½ cup whole milk
½ teaspoon vanilla extract

Steps:

  • Make the Dough: Dissolve 1 teaspoon sugar into the ½ cup warm water (if using fresh cake yeast, the water temperature should be between 90 to 95 degrees F; if using active dry yeast, the water temperature should be 120 to 130 degrees F). 2 packages (1/4 ounce each) active dry yeast
1/2 cup warm 2% milk (110° to 115°)
1/4 cup plus 2 tablespoons sugar
3/4 teaspoon salt
1 cup butter, softened
1 cup sour cream
3 large eggs, room temperature, lightly beaten
6 to 6-1/2 cups all-purpose flour
FILLING:
1-1/4 cups sugar
1/2 cup butter, cubed
1 large egg
1/2 teaspoon ground cinnamon
4-1/2 cups ground walnuts
1 large apple, peeled and grated
ICING:
2 cups confectioners' sugar
2 to 3 tablespoons 2% milk

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the sugar, salt, butter, sour cream, eggs and 3 cups flour. Beat on medium speed for until smooth, 3 minutes. 1-2 lb nuts, ground (about 1 ½ lbs. walnuts or 3/4 lbs. pecans)
2- 1/2 c sugar
2 stick (1 cup) butter-melted
2 eggs
1 large cooking apple (grated)
3/4- 1 tsp cinnamon (per desired taste)
DOUGH INGREDIENTS
6-6 1/2 c sifted all-purpose flour
3/4 tsp salt
6 Tbsp sugar
2 yeast cakes (or 2 packages of dry yeast)
1/2 c warm milk
1 c sour cream
2 stick (1 cup) butter-melted or very soft

My best pal Pat, is a wonderful baker. As I am not, I coaxed her into baking for me. When I moved away I lost all her goodies. Her nut rolls are better than any I've ever tasted and I missed them. She gave me the recipe and assured me I could make them. Well, she was right and now I make them every Christmas.

NUT FILLING
2 lb ground walnuts
3/4 c sugar
1/2 c milk
6 egg whites
1/4 lb butter
1/2 c honey
DOUGH
1 box pillsbury hot roll mix
5 Tbsp butter

Steps:

  • 1. FILLING: Combine filling ingredients in a saucepan. Cook and stir until well blended. Do not boil. When hot, remove from heat to get to warm.
  • 2. DOUGH: make the Hot Roll Mix according to package directions using hot water, soft butter and an egg. Then add 5 tablespoons butter.
  • 3. Mix the dough using floured hands. Form into a ball. Cover with a bowl and let rest for 5 minutes.
  • 4. Place in a greased bowl, cover and let rise in a warm place for 20 to 30 minutes or until doubled in size.
  • 5. Roll out 1/2 the dough. Add 1/2 the nut filling. Roll dough up into a loaf. Make second loaf. Place on 2 greased cookie sheets. Cover and let rise again for 20 to 30 minutes.
  • 6. Brush loaves with beaten egg. Bake at 350* for 25 to 30 minutes or until loaves are brown.

1/4 cup warm milk
1/2 lb butter (2 sticks, softened)

1 lb walnut meat, finely ground
1 1/2 cups sugar

Steps:
