A no-bake dessert using a ready-made angel food cake and ingredients that can be easily found in any store. It looks like a large snowball when finished.

1 (10 inch tube pan) angel food cake
6 cups frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved
2 tablespoons lemon juice
1 cup white sugar
1 (10 ounce) package flaked coconut
2 (.25 ounce) packages unflavored gelatin
4 tablespoons water
1 cup boiling water

Steps:

  • Line a 4 quart round mixing bowl with parchment paper.
  • Break cake up into small bite-sized pieces.
  • Drain the crushed pineapple, reserve the syrup. You should have 1 cup of syrup if not add enough water to make 1 cup.
  • Dissolve the gelatin in the 4 tablespoons of cold water. Add the boiling water, pineapple syrup, sugar and lemon juice. Mix well and place in the refrigerator until mixture just starts to thicken.
  • Add the crushed pineapple to the gelatin mix and then fold in 4 cups of the whipped topping.
  • Place a layer of cake pieces, then a layer of the pineapple mixture in the prepared bowl. Continue until all the cake and pineapple mixture is used up. Refrigerate for at least 12 hours or overnight.
  • Turn the chilled cake out onto a serving platter and frost it with the remaining whipped topping and sprinkle with the coconut.

1 duncan hines fudge marble cake mix
2 lbs ricotta cheese
2 cups shredded carrots
1 cup butterscotch chips
1 cup sugar
1 tablespoon vanilla
1 tablespoon almond extract
4 eggs
shortening, to coat cake pan
flour, to coat cake pan
2 (3 ounce) packages cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla
1 cup finely shredded pecans (I use a salad shooter)
4 3/4 cups powdered sugar, sifted

Steps:

  • Grease and flour bundt pan.
  • Set aside.
  • Preheat oven to 350.
  • In a very large bowl, combine cake mix, sugar, ricotta cheese, eggs, vanilla& almond extract.
  • Beat well.
  • Stir in the carrots and butterscotch chips.
  • Pour mixture into cake pan.
  • Bake at 350 for at least 1 hour and 10 minutes (longer if needed).
  • I use a bamboo skewer to determine when cake is done.
  • Poke cake with skewer.
  • If skewer comes out clean, cake is finished baking.
  • If skewer comes out with gooey substance, bake longer.
  • When completely cool, turn out of pan& prepare icing.
  • For icing: Mix cream cheese, butter and vanilla together.
  • Beat well.
  • Gradually add 2 C.
  • powdered sugar, beating well.
  • Add another 2 1/2 to 2 3/4 C.
  • powdered sugar until reaching a good spreading consistency.
  • Finally, stir in pecans.
  • Once cake is completely cool ice with above frosting.
  • Cover and store cake in refrigerator.

I got this from a SW cookbook some time ago. It gets its name because the cake is cracked with crevices on top when done. If you love German chocolate cake, but hate the time consuming process,,,this cake is wonderful!! It reminds me of my grandma's 3 layer German chocolate cake. It's too rich for just the two of us, so hubby looks forward to family gatherings and holidays or his birthday, smile. I love this because I love cream cheese and German chocolate and the fact that it is super easy!

1 (18 ounce) German chocolate cake mix
1 1/4 cups water (or as called for by the cake mix directions)
3 eggs (or as called for by the cake mix directions)
1/2 cup oil (or as called for by the cake mix directions)
1 cup coconut
1 cup pecan pieces
1/2 cup margarine, softened
8 ounces cream cheese, softened
1 lb powdered sugar
1 teaspoon vanilla

Steps:

  • spray 9x13" pan with oil and set oven to 350°F.
  • spread the coconut and pecan pieces evenly on the bottom of pan.
  • prepare the cake mix according to directions on box, and pour over coconut and pecan pieces
  • mix well together: margarine, cream cheese, vanilla and powered sugar.
  • spoon over cake in dollops, no need to spread evenly.
  • bake for approx 40-50 minutes.
  • check with toothpick for doneness.
  • cake will be cracked on top, but should be a moist cake.
