CREAM-CHEESE BROWNIES

Cream-Cheese Brownies image

Lining the pan isn't busywork; it makes it easy to remove the brownies.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Brownie Recipes

Yield Makes 16 squares

Number Of Ingredients 9

10 tablespoons unsalted butter, cut into pieces, plus more for pan
1 cup plus 2 tablespoons all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
8 ounces semisweet or bittersweet chocolate, chopped
4 ounces cream cheese, room-temperature
1 1/2 cups sugar
4 large eggs

Steps:

  • Preheat oven to 350 degrees. Brush a 9-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk 1 cup flour, cocoa, baking powder, and salt; set aside.
  • Place 8 tablespoons (1 stick) butter and chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add 1 1/4 cups sugar; mix to combine. Add 3 eggs, and mix to combine. Add flour and cocoa mixture; mix just until moistened (do not overmix).
  • Prepare cream-cheese mixture: Whisk cream cheese with 2 tablespoons room-temperature butter. Whisk in 1/4 cup sugar, 1 egg, and 2 tablespoons all-purpose flour. Alternately spoon chocolate batter and cream-cheese mixture into pan; with the tip of a paring knife, swirl to marble.
  • Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares.

CREAM CHEESE BROWNIES

These brownies offer a small taste of heaven. You have to follow the directions, otherwise they won't be so heavenly.

Provided by Mirj2338

Categories     Bar Cookie

Time 45m

Yield 16 slices of heaven

Number Of Ingredients 15

4 ounces cream cheese, at room temperature
1 egg yolk, at room temperature
1 teaspoon vanilla
2 tablespoons sugar
1 tablespoon flour
5 tablespoons sweet butter
5 ounces semisweet chocolate or 5 ounces bittersweet chocolate
2 eggs, at room temperature
3/4 cup sugar
1/2 cup flour
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/2-1 cup semi-sweet chocolate chips
1/2 cup coarsely chopped nuts

Steps:

  • Preheat the oven to 325°F.
  • Lightly grease a square 8X8-inch pan.
  • To make the cream cheese layer, put the cream cheese in a mixer bowl and mix with the paddle attachment until it's smooth.
  • Add the rest of the cream cheese layer ingredients, beating well and scraping down and of the batter that dares try to escape up the sides of the bowl.
  • To make the brownie layer, melt the butter and the chocolate together until smoothly melted.
  • Put aside and let come to room temperature.
  • Be patient, it's worth it.
  • In a separate bowl from the cream cheese mixture, mix the eggs and the sugar until it's thick and a gorgeous lemon color.
  • Add the chocolate mixture and mix well until combined.
  • Again, scrape down the sides of the bowl.
  • Add the flour, vanilla, baking powder, salt and the chocolate chips, mix well until combined.
  • Pour half the chocolate mixture into the prepared pan.
  • Dollop the cream cheese mixture over that.
  • Don't worry if it doesn't cover the chocolate. It won't.
  • Add the remaining chocolate mixture.
  • Take a knife and gently draw it through the batters, from left to right and from top to bottom, making a checkerboard pattern.
  • Don't allow the mixtures to combine, be careful.
  • Sprinkle with the nuts.
  • Bake in the oven until the sides, but not the tops, begin to brown, about 25 to 30 minutes.
  • Don't wait until a tester comes out clean, if you do then you have overbaked and basically murdered the brownies.
  • Set aside to cool for about 10 minutes, cut into 12 or 16 brownies, cover and refrigerate.

EASY CREAM CHEESE BROWNIES

Easy Cream Cheese Brownies image

This makes a big 13x9 pan of brownies, using a brownie box mix. Super easy and looks gormet when you are done! (Be sure to buy the box mix that says that it makes a 13x9 recipe or you'll have problems.) The mix I use is by Betty Crocker.

Provided by Pam-I-Am

Categories     Bar Cookie

Time 50m

Yield 16 serving(s)

Number Of Ingredients 8

1 (20 ounce) package fudge brownie mix (13x9 size)
1/4 cup water (or what mix calls for)
1/3 cup oil (or what your mix calls for)
2 eggs (or what your mix calls for)
1 (8 ounce) package cream cheese
1/3 cup sugar
1 egg
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350 F degrees.
  • Prepare the brownie mix according to package directions (water, oil, eggs).
  • Pour into a greased 13x9-inch baking pan.
  • Beat cream cheese with electric mixer on medium speed until smooth.
  • Add sugar and mix. Add vanilla and egg; mix until well-blended.
  • Place cheese mixture in dolups over the whole pan, leaving some brownie showing inbetween.

BABY RUTH CANDY BAR

Baby Ruth Candy Bar image

Provided by Food Network

Categories     dessert

Time 4h10m

Yield 8 candy bars

Number Of Ingredients 11

1/4 cup whole milk
5 unwrapped caramels
1 tablespoon light corn syrup
1 teaspoon butter
1/4 teaspoon vanilla
1/8 teaspoon salt
1 1/4 cups powdered sugar
20 unwrapped caramels
1 1/2 teaspoons water
2 cups dry roasted peanuts
1 (12-ounce) bag milk chocolate chips

Steps:

  • Combine all the ingredients for the centers, except for the powdered sugar, in a small saucepan over low heat. Stir often as the caramel slowly melts. When the mixture is smooth, add 3/4 cup of powdered sugar and stir. Save the remaining 1/2 cup of powdered sugar for later. Use a candy thermometer to bring the mixture to exactly 230 degrees, stirring often, then turn off the heat. When the temperature of the candy begins to drop, add the remaining 1/2 cup of powdered sugar to the pan, then use a hand mixer on high speed to combine. Keep mixing until the candy cools and thickens and can no longer be mixed. That should take 1 to 2 minutes. Let the candy cool in the pan for 10 to 15 minutes, or until it can be touched. Don't let it sit too long-- you want the candy to still be warm and pliable when you shape it. Take a teaspoon-size portion and roll it between your palms or on a countertop until it forms a roll with the width of your index finger, and measuring about 4 1/2-inches long. Repeat with the remaining center candy mixture and place the rolls on waxed paper. You should have 8 rolls. Let the center rolls sit out for 1 to 2 hours to firm up.
  • Combine the 20 caramels with the 1 1/2 teaspoons of water in a small saucepan over low heat. Stir often until the caramels melt completely, then turn off the heat. If you work fast this caramel will stay warm while you make the candy bars. Pour the peanuts onto a baking sheet or other flat surface. Using a basting brush and working quickly, "paint: a coating of caramel onto one side of a center roll. Quickly turn the center over, caramel side down, onto the peanuts and press gently so that the peanuts stick to the surface of the candy. Paint more caramel onto the other side of the roll and press it down onto the peanuts. The candy should have a solid layer of peanuts covering all sides. If needed, brush additional caramel onto the roll, then turn it onto the peanuts to coat the roll completely. Place the candy bar onto waxed paper, and repeat with the remaining ingredients. Place the bars into your refrigerator for 1 to 2 hours so that they firm up. Pour the milk chocolate chips into a glass or ceramic bowl and zap it in the microwave for 2 minutes on 50 percent power. Gently stir the chips, then heat for an additional 30 seconds at 50 percent power. Repeat if necessary, stirring gently after each 30 seconds. Don't over-cook the chips or the chocolate will burn and seize up on you. Drop a candy bar center into the melted milk chocolate. Cover the candy bar with chocolate using 2 forks, 1 in each hand. When the candy is covered with chocolate, balance the bar on both of the forks, one at each end of the candy bar, and tap the forks on the top edge of the bowl so that much of the chocolate drops off. Carefully place the candy bar onto waxed paper and remove the 2 forks. Repeat with the remaining ingredients, and then chill the candy bars until firm.

CREAM CHEESE BROWNIES

Cream Cheese Brownies image

These are my favorite kind of brownies. I like chocolate, but I'm not into the serious fudgy-chocolate kind of stuff. With these brownies I can pick out the ones with more cream cheese and leave the more chocolaty ones for someone else (like my mom).

Yield makes one 9 by 13-inch pan

Number Of Ingredients 10

4 ounces unsweetened chocolate
3/4 cup butter
2 cups sugar
1 cup flour
3 eggs
1 teaspoon vanilla
8 ounces cream cheese
1/3 cup sugar
1 egg
2 tablespoons flour

Steps:

  • To prepare the brownies: Preheat the oven to 350°F. Lightly grease a 9 by 13-inch pan.
  • Place the chocolate and butter in a microwave-safe bowl and cook on high for 2 minutes, or until completely melted. Stir in the sugar until well combined. Add the flour, eggs, and vanilla and stir until combined. Spread the mixture into the baking pan.
  • To prepare the cream cheese: Place the cream cheese in a bowl and, using an electric mixer on medium speed, whip the cream cheese until smooth. Add the sugar, egg, and flour and mix until smooth.
  • Drop spoonfuls of the cream cheese batter on top of the chocolate and swirl it into the chocolate by running a knife back and forth across the pan. Bake the brownies for 35 minutes, or until the cream cheese is light brown. Cool completely before cutting.
