2 bacon strips, chopped
1/4 cup chopped onion
1/4 cup sliced fresh mushrooms

1 tablespoon olive oil
1 tablespoon butter
1/2 garlic clove
4 boneless chicken breast halves
4 tablespoons all-purpose flour
salt and pepper
chili powder
4 tablespoons thick barbecue sauce
4 -6 slices monterey jack pepper cheese
chopped fresh cilantro, for garnish (optional)

Steps:

  • Grease a baking dish and set aside. Heat the oven to 375°.
