- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble into small pieces.
- Combine cauliflower, heavy cream, butter, 1/2 teaspoon salt, 1/4 teaspoon pepper, and garlic powder in a pot; bring to a boil. Cook until cauliflower is soft, 18 to 20 minutes.
- Transfer cauliflower mixture carefully to a food processor. Add crumbled bacon and smoked Gouda cheese; blend until smooth and creamy. Season with salt and pepper.

BAKED KETO BACON CAULIFLOWER MASH RECIPE
This creamy (healthy) alternative to traditional mashed potatoes is a hearty side for any main dish. I am not going to say it tastes "just like" mashed potatoes because it doesn't. Steps:
- Place the cauliflower in a microwave safe dish with a lid on high for 8 minutes, or until soft. Remove from microwave and take off the lid to let steam escape. You want the cauliflower to dry out a bit. See the post for tips.
- Transfer the cauliflower and all ingredients except bacon and cheese in a food processor or blender. Pulse until smooth and salt and pepper to taste if you need to. Add almond milk or heavy cream one tbsp at a time if you need more moisture to get it smooth.
- The texture should be smooth. Transfer to an oven safe serving dish or six ramekins. Top with cheese and bacon. Broil for a couple of minutes to get a nice golden crust (watch it closely). See post for alternatives and tips for baked cauliflower mash (yum).
