- In 10-inch skillet, cook bacon until crisp; drain on paper towels. Crumble bacon; set aside.
- Heat gas or charcoal grill. In medium bowl, mash bread and milk with fork until well mixed. Stir in chicken, cheese and bacon. Shape into 4 patties, 1/2 inch thick.
- Carefully brush oil on grill rack. Place patties on grill over medium heat. Cover grill; cook 9 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 165°F.

My husband and I had burgers at a restaurant once that had blue cheese and bacon. It was so good, so I attempted to make our own. After lots of trial and error, I've got the recipe down. I typically make the burgers and freeze them for future use. The blue-cheese butter freezes well too for steaks or other uses.

- Mix together the softened butter and blue cheese until well mixed. Roll into a log about 2-3 inches in diameter and wrap in Parchment paper. Refrigerate until hardened. You can also freeze if you don't plan to use for a while.
- Once the butter is hardened, mix together the remaining ingredients in a large bowl by hand. Form the meat into 4-6 balls (depending on how big you want your burgers).
- Slice 1/2 inch slices from hardened blue cheese/butter log. Place each butter/blue cheese circle into the middle of the burger ball and press into middle, shaping into a thick burger shape. Repeat for all remaining burgers. Ensure that butter/blue cheese is sealed into the middle of the meat. Grill burgers until desired doneness.
- Cook bacon as usual on stove or oven. If you have non-peppered bacon, add a generous amount of pepper before cooking.
- Serve burgers on your favorite bun with bacon. Add your favorite toppings -- fresh tomatoes, lettuce, extra blue cheese, ketchup, mustard, extra blue cheese, etc.

- In a large, heavy frying pan over medium heat, warm olive oil. Add onions, cover and cook, stirring occasionally, until they are completely limp, 10-15 minutes. Uncover the pan, reduce heat to medium low and cook, stirring frequently, until the onions are golden brown and sweet, 35-45 minutes; do not allow them to burn. Remove the pan from heat and let the carmelized onions cool to room temperature. In a small bowl, stir together blue cheese and bacon. Set aside. Divide ground beef into 6 equal portions and shape each into a ball. Using your thumb, make a deep depression in each ball; do not push all the way through. Spoon about 1 tablesppn on he blue cheese-bacon mixture into the depression. gently shape the meat around the fillin, sealing it inside. Form the balls into patties about 1 inch thick. Transfer to a plate. Preheat and indoor electric grill on high heat. Place the burgers on the grill and cook, turning once, 5 to 7 minutes per side for medium, or until done to your liking. Transfer each burger to the bottom half of a bun. Spread 1 1/2 tablespoons Dijon mustard on the inside of each top bun. Top each burger with 2 tablespoons carmelized onions, 2 pieces of lettuce and 1 tomato slice, then cover with top bun. Serve immediately.
