12 asparagus spears
1/2 cup pesto sauce
1 tablespoon olive oil
1/2 teaspoon italian seasoning
1/4 cup parmesan cheese, grated
salt and pepper, to taste
4 slices bacon

Steps:

  • Preheat oven to 400º F.
  • Line baking sheet with heavy-duty foil.
  • Pound out of the chicken to approximately 1/2" thickness.
  • Place chicken and pesto in medium bowl; toss to coat.
  • Cut asparagus to approx size of chicken roll (so that the asparagus will not peep out too much from the end).
  • Place olive oil and Italian seasoning in a shallow pan or ziplock bag and toss asparagus until coated well.
  • Place 3 asparagus spears and top with parmesan cheese.
  • Roll chicken around asparagus and wrap each roll with a bacon strip (2 if necessary to get good coverage).
  • Place, seam side down, in lined pan.
  • Bake, uncovered, at 400ºF for 35-40 minutes or until juices run clear.
  • Broil 6 inches from the heat for 3-5 minutes or until bacon is crisped.

  • Position racks in centre and upper third of oven, then preheat to 375°F. Line a rimmed baking sheet with parchment. ##Place chicken breasts on a cutting board. Cover with plastic wrap. 1 tablespoon vegetable oil
2 (6 to 8 ounce) boneless, skinless chicken breasts
1/4 cup all-purpose flour
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 slices bacon
1/2 cup apple juice
2 ciabbata rolls, halved lengthwise and toasted
1 tablespoon whole grain Dijon mustard
1 medium head Belgian Endive, TK, cored and thinly sliced lengthwise
1 medium gala, braeburn, or pink lady apple, cored, halved and thinly sliced

Steps:

  • Place chicken between 2 sheets of plastic wrap or parchment paper and use a frying pan to gently pound the breasts to an even thickness. (They should be about 1 inch thick.)
  • Combine flour, salt, and freshly ground black pepper in a wide, shallow dish and mix thoroughly. Coat each breast by dredging it in the flour mixture then shaking off excess flour. Wrap one piece of bacon around each piece of chicken and secure with a toothpick.
  • Heat oil in a medium, heavy-bottomed frying pan over medium heat. When it shimmers, add chicken breasts and cook until bacon is well browned, about 5 minutes per side.
  • Add the juice, reduce heat to medium-low, and simmer until cider is reduced by 1/3, and chicken is cooked through, about 5 minutes more. Remove from heat and remove toothpicks.
  • To make a sandwich, spread mustard evenly on cut sides of bread. Layer half of each endive and apple slices alternately on one piece of bread, top with a chicken breast, drizzle with pan juices, season with freshly ground black pepper, and close sandwich. Repeat to make a second sandwich.

12 asparagus tips (top 2 inches only)
4 large skinless, boneless chicken breasts, tendons removed
1 cup all-purpose flour
2 eggs, beaten
2 cups bread crumbs (coarse if possible)
5 tablespoons butter

Steps:

  • In a frying pan, cook bacon until almost crispy.
  • Steam asparagus tips for 3 minutes.
  • Using a mallet, or other blunt instrument (the kind you keep beside your bed to ward off mad burglars), flatten chicken breasts by placing them, 1 at a time, between 2 sheets of wax paper or plastic wrap, and pound to 1/4-inch thickness.
  • Preheat oven to 350 degrees F.
  • In 3 separate bowls place: flour, eggs, beaten and bread crumbs. Line the 3 bowls in a row.
  • Complete the following procedure for each portion:
  • Take 1 flattened chicken breast, season with salt and pepper. Lay 2 strips of bacon side by side, on the top side of the chicken breast. Place 3 asparagus tips crosswise at 1 end and top with 1 tablespoon butter.
  • Starting at the end with the asparagus, roll up chicken like a carpet around the bacon, butter and asparagus, and tuck in the loose ends underneath.
  • Dip rolled chicken in the flour, then the egg, and then the bread crumbs, covering thoroughly at each step. Place in a shallow pan with the seam on the bottom. Place 1/4 tablespoon butter on top of each piece of chicken. Bake for approximately 20 minutes, or until cooked throughout. Towards the end, baste with pan drippings.

1 (8 ounce) package shredded mozzarella cheese
4 skinless, boneless chicken thighs
4 extra-thick bacon slices

2 tablespoons butter, divided
2 jalapeno peppers - stemmed, seeded, and minced
3 tablespoons all-purpose flour
2 cups warm milk
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch square pan with parchment paper.
  • Trim asparagus spears to extend 1 inch past each side of the thighs.
  • Place 1 cup of the mozzarella cheese into a bowl.
  • Lay chicken thighs flat on a work surface. Place 1/4 cup mozzarella cheese on each thigh, followed by 3 asparagus spears. Roll thigh around stuffing; wrap 1 bacon slice around each thigh. 6 boneless, skinless chicken breasts (flattened)
½ cup shredded Mozzarella cheese
8 ounces cream cheese (softened)
8 bacon slices (cooked and crumbled)
8 asparagus spears (cooked, trimmed, and cut into 1/2 inch pieces)
½ cup breadcrumbs
1 can cream of mushroom soup

Steps:

  • Preheat your oven to 375 degrees F and line a 9x13 inch baking dish with foil; set aside.
  • In a small bowl mix together cheese, cream cheese, bacon, and asparagus.
  • Slice chicken breasts in half but don't cut it completely through. You will want it still connected on one end.
