  • For the crema: Whisk together the sour cream, mascarpone, lemon zest, lemon juice, basil and salt. Cover, and refrigerate for at least 1 hour to let the flavors marry.
  • For the dates: Preheat the oven to 400 degrees F.

1/2 cup balsamic vinegar
1/4 cup sliced almonds, toasted
6 ounces goat cheese
24 pitted dates
1 lb bacon (see note)

Steps:

  • Simmer balsamic vinegar in small saucepan until reduced by half. Syrup will be thick. Set aside.
  • Mix almonds into goat cheese.
  • Cut small slit in dates and stuff with small amount of cheese mixture.
  • Cut each bacon slice into 3 pieces. (Par-cook if thick sliced.) Wrap piece of bacon around each date, and secure with toothpick.
