1 Granny Smith apple, seeded, peeled, cut into 1/4-inch-thick slices
2 teaspoons fresh lemon juice

3/4 cup whole milk
3/4 cup all purpose flour
1 tablespoon plus 1/4 cup sugar

Time 1h

Yield 6 serving(s)

Number Of Ingredients 7

4 -5 apples, peeled,cored and thinly sliced
1/4 cup unsalted butter
1/2 cup sugar
1/2 teaspoon cinnamon
6 eggs
1 cup flour
1 cup milk

Steps:

  • Preheat oven to 375 degreed F.
  • Melt butter in an 8 inch oven proof skillet or casserole.
  • Saute apples in the butter.
  • Sprinkle with sugar and cinnamon, cooking until the sugar is melted and the apples have begun to soften.
  • Mix together eggs, flour and milk in a medium sized bowl.
  • Pour over the apples.
  • Bake for 20-30 minutes or until puffed and done in the center.
  • Serve warm with maple syrup.

Tips:

  • Use ripe apples: Ripening brings out the natural sweetness of apples, reducing the need for additional sugar. Choose firm varieties like Granny Smith or Honeycrisp that hold their shape during cooking.
  • Grate the apples: Grating ensures the apples distribute evenly throughout the batter, creating a uniform texture and flavor in every bite.
  • Don't overmix the batter: Overmixing develops the gluten in the flour, resulting in tough pancakes. Mix just until the ingredients are combined.
  • Cook the pancakes over medium heat: This allows the pancakes to cook through without burning. Be patient and flip them only once, when bubbles form around the edges.
  • Serve immediately: Freshly cooked pancakes are the best, so serve them hot off the griddle. Accompany them with butter, maple syrup, and a sprinkle of cinnamon or powdered sugar.

Conclusion:

Baked apple pancakes offer a delightful twist on the classic breakfast dish. They are easy to make, versatile in their flavor combinations, and a great way to use up leftover apples. Whether you prefer a sweet and cinnamony flavor or a savory and cheesy version, these pancakes are sure to satisfy. So next time you're looking for a special breakfast treat, give baked apple pancakes a try.
