BAKED APPLES WITH CARAMEL SAUCE

Baked Apples with Caramel Sauce image

Provided by Food Network

Categories     dessert

Time 45m

Yield 6 servings

Number Of Ingredients 8

6 medium baking apples, such as Boskop, Braeburn, Fuji, or Gala
4 to 6 dried figs
1/4 cup chopped almonds, toasted
1 cup sugar
1/3 cup plus 2 tablespoons butter
1 tablespoon heavy cream or creme fraiche
Juice of 1 lemon
Serving suggestion: cinnamon whipped cream or creme fraiche

Steps:

  • Preheat the oven to 350 degrees F.
  • Core the apples. Using a paring knife, score a ring around the midriff of each apple, just cutting through the skin to prevent the apples from bursting during baking. Stuff the apples with the figs and almonds. Set on a baking sheet, and bake until puffed up and soft all the way through, about 30 minutes.
  • Meanwhile, put the sugar in a saucepan with a spoonful of water, and boil to a golden caramel, about 5 minutes, depending on how much water you've added. Do not stir the sugar with a spoon, gently swirl the saucepan over the heat until the desired color. You want a nice rich caramel color, but don't let it get too dark.
  • Serve the baked apples warm from the oven with the sauce poured over and with a generous slump of cinnamon whipped cream or creme fraiche on the side.

Yield Makes 8 servings

Number Of Ingredients 16

For the topping:
1 cup all-purpose flour
6 tablespoons sugar
3/4 stick (6 tablespoons) cold unsalted butter, cut into small pieces
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract
1/8 teaspoon pure almond extract (optional)
1/2 cup sliced almonds
For the filling:
2/3 cup sugar
1/4 cup unsweetened apple juice
3 tablespoons cold unsalted butter, cut into small pieces
Pinch of salt
4 pounds baking apples such as Golden Delicious, Gala, or Crispin (about 7 large), peeled, cored, and cut into 1-inch-thick slices
Special Equipment
2- to 2 1/2-quart shallow baking dish

Steps:

  • Preheat oven to 375°F with rack in middle. Butter baking dish
  • For the topping:
  • Pulse together flour, sugar, butter, salt, and extracts in a food processor until some large clumps form.
  • Set aside 1/4 cup for filling and transfer remaining topping to a bowl. Stir in almonds.
  • For the filling:
  • Cook sugar in a dry 2-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a wooden spoon, until sugar is melted into a deep-golden caramel.
  • Remove from heat and carefully add apple juice, butter, and salt (caramel will harden and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved.
  • Put apples in a large bowl and toss with reserved topping mixture and caramel, then spread in baking dish. (Dish will be very full.)
  • Scatter clumps of topping over apples, squeezing small handfuls of topping into clumps when necessary.
  • Bake until apples are tender and top is golden and crisp, about 1 hour. Cool to warm or room temperature.

Tips:

  • Choose the right apples: Use firm, tart apples that hold their shape well when baked, such as Granny Smith, Honeycrisp, or Pink Lady.
  • Prepare the apples properly: Core and peel the apples, then cut them into uniform slices or chunks. This will help them cook evenly.
  • Use a variety of spices: Don't be afraid to experiment with different spices to flavor your apples. Some popular choices include cinnamon, nutmeg, ginger, and allspice.
  • Add a little sweetness: If you like your apples a little sweeter, you can add a tablespoon or two of sugar or honey to the filling. You can also drizzle the apples with maple syrup or caramel sauce before baking.
  • Don't overcook the apples: Baked apples should be tender but still hold their shape. Overcooked apples will become mushy and lose their flavor.
  • Serve baked apples warm or cold: Baked apples can be served warm or cold. If you're serving them warm, top them with a scoop of vanilla ice cream or whipped cream. If you're serving them cold, you can chill them for a few hours or overnight.

Conclusion:

Baked apples are a delicious and versatile dessert that can be enjoyed all year round. They're easy to make and can be tailored to your own taste preferences. So next time you're looking for a sweet treat, give baked apples a try. You won't be disappointed!
