Time 1h10m

Yield 8

Number Of Ingredients 13

One 1-lb challah or raisin challah
5 large eggs
1½ cups half & half
3 tablespoons maple syrup
2 tablespoons bourbon (optional; replace with apple cider or half-&-half if desired)
1 teaspoon vanilla extract
Heaping ¼ teaspoon salt
4 tablespoons unsalted butter
4 large Granny Smith apples, peeled and thinly sliced
¼ cup + 2 tablespoons packed dark brown sugar
6 tablespoons maple syrup
1 teaspoon ground cinnamon
Confectioners' sugar and/or maple syrup

Steps:

  • Butter a 9 x 13-inch or 3-QT baking dish. Slice the bread into ¾-inch-thick slices.
  • In a large bowl, whisk together the eggs, half & half, maple syrup, bourbon, vanilla, and salt.
  • Dip each slice of challah into the custard mixture for about 5 seconds, then arrange in an overlapping pattern in the prepared baking dish. Be sure the entire bottom of the dish is covered with the bread. Pour any remaining custard over the bread. Set aside.
  • In a large sauté pan, melt the butter over medium-high heat. Add the apples, brown sugar, maple syrup, and cinnamon. Cook, stirring frequently, until the apples are softened and the sugar-syrup is thickened, about 8 minutes. Spoon the apples and sugar-syrup evenly over the bread, making sure not to leave any of the syrup behind. If not baking immediately, cover the dish with plastic wrap and refrigerate overnight. Otherwise, proceed with the recipe.
  • Preheat the oven to 350°F and set an oven rack in the middle position.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking until puffed and golden, about 20 minutes more. Remove from the oven and, using a fine sieve, dust with the confectioners' sugar. Serve with maple syrup.

UPSIDE-DOWN BAKED APPLE FRENCH TOAST

Upside-Down Baked Apple French Toast image

This French toast may remind you of a perfectly caramelized tarte tatin, the luscious French upside-down apple tart. Prepare the toast in advance by layering all the ingredients in one pan. Number Of Ingredients 11

4 tart apples, such as McIntosh or Granny Smith
2 tablespoons fresh lemon juice
3 large ripe bananas
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter
1/2 cup (firmly packed) light brown sugar
1 tablespoons maple syrup
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
4 to 5 slices challah bread (1-inch thick)

Steps:

  • Preheat oven to 375 F.
  • Peel, core, and cut each apple into 3/4 inch thick wedges. Place the apple wedges in a large mixing bowl, and toss gently with the lemon juice to prevent discoloration. Peel the bananas, and slice them crosswise 3/4 inch thing. Add the bananas to the apples and toss to coat evenly with lemon juice. Sprinkle the cinnamon over the fruits and toss well to combine.
  • Melt butter in a large skillet over medium-high heat. Add the fruit and saute until tender, about 30 seconds. Add the brown sugar and maple syrup and cook until the sugar is dissolved, 30 seconds longer, remove from heat.
  • Pour the contents into a lightly buttered, non-reactive, 9- inch round baking dish. In a medium size bowl, beat the eggs, then stir in the milk and vanilla. Dip the bread slices into the egg mixture just to moisten (both sides), then place them over the fruit in a single layer in the pan, making sure to cover the fruit entirely. Pour any leftover egg mixture over the bread. Let the mixture sit for 10 minutes. (This can be prepared up to this point in advance, covered and refrigerated overnight)
  • Bake the French toast, uncovered until the top is golden, 30-35 minutes. Cool for 5 minutes. Place a serving tray over the pan, and carefully turn them over to unmold the French toast. Spoon any syrup or fruit left in the pan over the bread, and serve at once.

Tips:

  • Choose the right bread: Thick, sturdy bread like French bread, sourdough, or challah will hold up well to the filling and prevent it from getting soggy.
  • Make sure the applesauce is thick: If your applesauce is too thin, it will make the sandwiches difficult to assemble and eat. If your applesauce is too thick, you can thin it out with a little bit of milk or water.
  • Don't overfill the sandwiches: Too much filling will make the sandwiches difficult to close and eat. Aim for about 1/4 cup of filling per sandwich.
  • Cook the sandwiches over medium heat: This will help to prevent the bread from burning and the filling from getting too dry.
  • Serve the sandwiches immediately: French toast sandwiches are best enjoyed fresh out of the pan. If you need to make them ahead of time, you can store them in the refrigerator for up to 24 hours. To reheat, simply pop them in the toaster or oven until they are warmed through.

Conclusion:

Baked applesauce French toast sandwiches are a delicious and easy breakfast or brunch recipe. They are perfect for using up leftover applesauce, and they can be customized to your liking. With a few simple ingredients and a little bit of time, you can enjoy a warm and comforting meal that the whole family will love.
