4 ripe bananas
2 x 32g bag chocolate buttons
vanilla ice cream , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
  • Serve with a scoop of ice cream and any melted chocolate that has escaped!

2 ounces fine-quality bittersweet chocolate (not unsweetened), chopped fine
1/4 cup heavy cream
1/8 teaspoon vanilla extract

  • Divide half of the banana slices between two 1-cup ramekins and sprinkle half of chocolate over them. Arrange remaining banana slices over chocolate and top with remaining chocolate.

  • Lay the bananas so the ends are pointing up. Using a knife, cut a slit down the inside top so you can open it like an envelope, careful not to rip open the peel. How do I explain Byron Bay to non-Australians? Well the name of the retreat should give you some idea. Byron Bay, situated on the New South Wales coastline, on the Pacific Ocean, has long been the retreat of hippies - or aging hippies - and in more recent years properties there have been much sought after by Australian actors, such as Russell Crowe and Paul Hogan. So although Byron Bay still has New Age leanings, it has also become the stomping ground of the rich and famous. That said, this recipe with its three ingredients and no chopping or grating, whisking or kneading, couldn't be simpler. Or quicker!
