This is a recipe I created after trying several baked chicken finger recipes. I like this combination of seasonings, but it's always fun to try different things. You could use saltines, other crackers, other spices, etc!

1 lb chicken breast, sliced into thin strips
1/2 cup low-fat buttermilk
1/2 cup crushed corn flakes (, or cheese crackers)
1/4 cup Italian seasoned breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon oregano
1/4 teaspoon black pepper
1 teaspoon olive oil

Steps:

  • Preheat oven to 400 degrees.
  • In a medium glass or plastic bowl, combine chicken breast and buttermilk.
  • Cover and put in refrigerator for 10-15 minutes.
  • Combine corn flakes (or cheese crackers),italian seasoned breadcrumbs, garlic powder, oregano, and black pepper in large ziploc bag.
  • After chicken is chilled, drain off liquid and add to ziploc bag, shaking to coat.
  • Add olive oil to shallow baking pan.
  • Place chicken in pan.
  • Bake for approximately 4 minutes on each side, or until chicken is thoroughly cooked.
  • Serve with honey mustard dip or light ranch dressing.

½ cup almond flour
1 teaspoon kosher salt

¾ teaspoon cayenne pepper

2 ½ cups shredded unsweetened coconut
3 eggs, beaten
avocado oil cooking spray
3 tablespoons butter
2 tablespoons white sugar
½ teaspoon kosher salt
2 firm ripe bananas, cut into 1/4-inch slices
1 cup thinly sliced fresh pineapple
2 tablespoons cornstarch
4 tablespoons coconut milk
1 passion fruit, pulp scooped out

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a sheet pan with parchment paper.
  • Pour the can of coconut milk into a large bowl. Add chicken tenders and toss to coat.
  • Combine coconut flour, almond flour, salt, ginger, cayenne pepper, and turmeric on a large plate or in a shallow dish. Place shredded coconut and eggs in separate shallow bowls.

1 lb boneless skinless chicken breasts, cut into strips

  • Heat oven to 375°F. Line 2 cookie sheets with cooking parchment paper.
  • Place cereal in large food-storage plastic bag; crush cereal using rolling pin. Place cereal in wide shallow dish. In another wide shallow dish, stir together mayonnaise, 1/2 cup honey and 1/3 cup mustard.
  • Dip chicken strips in mayonnaise mixture, then in crushed cereal to coat; place on cookie sheets, spacing chicken evenly apart.

1/2 cup wheat germ
1/2 cup unprocessed bran
1/4 cup plain dried breadcrumbs
2 tablespoons ground flaxseed
2 tablespoons grated Parmesan
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Coarse salt and ground pepper
1 tablespoon olive oil
2 large eggs
1 1/2 pounds chicken tenders (about 16)
Barbecue sauce, for serving (optional)

Steps:

  • Preheat oven to 450 degrees. In a food processor, combine wheat germ, bran, breadcrumbs, flaxseed, Parmesan, onion and garlic powders, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; pulse to combine. Add oil; pulse to combine. Transfer crumb mixture to a large bowl.

2 teaspoons vegetable oil
1 lb boneless skinless chicken breast
1/3 cup thick yogurt
1 tablespoon ketchup
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
1 1/2 cups corn flake crumbs

Steps:

  • Preheat oven to 400 degrees farenheit.
  • Brush baking sheet with oil.
  • Cut each chicken breast into 4 or 5 strips.
  • Place yogurt, ketchup, mustard, Worcestershire and pepper in bowl and combine well. Add chicken pieces and coat well.

1 egg white
1/4 cup plain low-fat yogurt

  • Preheat oven to 375°F.

1 1/2 lb chicken tenderloins (or boneless, skinless breasts cut into 3/4-inch strips)

  • Preheat oven to 475 F. Set a wire rack inside a rimmed baking sheet and spray the rack with cooking spray. Combine the breadcrumbs and canola oil in a 12-inch skillet, and cook over medium to medium-high heat, stirring almost constantly, until golden brown. Transfer the breadcrumbs to a wide, shallow dish and set aside to cool. Mix the flour, garlic powder, and cayenne pepper together in a second wide and shallow dish. Add the egg whites, water, Dijon mustard and thyme to a third dish and whisk vigorously until the egg whites are broken up and the mixture is foamy. Season the chicken with salt and pepper.
