1/2 cup all-purpose flour
4 cups milk, warm
1 teaspoon dry mustard
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon cayenne pepper
Dash salt and freshly ground black pepper
Dash hot sauce
Dash Worcestershire sauce
3 cups shredded Cheddar
1 pound cavatappi pasta, cooked al dente
1 cup crushed potato chips
5 slices cooked bacon, crumbled
1/2 cup freshly grated Parmesan, for topping

Steps:

  • Heat oven to 350 to 375 degrees F.
  • Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour and cook, stirring, for 1 minute. Whisk in the warmed milk and bring to a boil, continue to whisk constantly. The mixture will thicken as the heat increases. Continue to stir while adding the dry mustard, nutmeg, cayenne, salt, pepper, hot sauce and Worcestershire. 1/2 lb elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon dry mustard
3 cups milk
1/4 cup yellow onion, diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar cheese, shredded (I like using both Vermont white cheddar and Wisconsin extra-sharp cheddar cheese)
1 teaspoon salt
fresh cracked black pepper
crushed kettle cooked potato chips (i use cape cod 40% reduced fat, like it matters with this recipe!)

Steps:

  • Preheat oven to 350°F.
  • In a large pot of boiling salted water cook the pasta to al dente.
  • While the pasta cooks, in a separate pot, melt the butter.
  • Whisk in the flour and mustard and keep it moving for about 5 minute Make sure it is free of lumps.
  • Stir in milk, onion, bay leaf and paprika. Simmer for 10 minute and remove bay leaf.
  • Temper in the egg.
  • Stir in 3/4 of the cheese.
  • Season with salt and pepper.
  • Fold the macaroni into the mix and pour into a 2 quart baking dish.
  • Top with remaining cheese and potato chips.
  • Bake 30 minute Let stand for 5 minutes before serving, then bask in the compliments during dinner!

2 teaspoons kosher salt
1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
  • For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. 1 Tablespoon salt
2 1/2 cups Elbow Macaroni
1/4 cup butter
1/4 cup all-purpose flour
4 cups milk
1/2 teaspoon salt
4 cups sharp cheddar cheese, shredded
1/4 cup butter, melted
1 cup Ritz crackers, crushed

Steps:

  • Preheat oven to 350 degrees F
  • Fill a large pot with water and add 1 Tablespoon of salt. Bring to a boil.
  • Stir in the macaroni and cook uncovered until pasta is cooked through but firm to the bite. (about 8 minutes depending on your stove). Turn burner off, remove from heat and drain.
  • In a separate large skillet {or dutch oven}, combine 1/4 cup of butter, and flour over medium to low heat until a thick paste is created.
  • Slowly add all the milk to the flour paste mixture, 1/4 cup at a time stirring well to incorporate each time before adding the next 1/4 cup so that the roux stays creamy and smooth. DON'T PANIC at this stage. Your mixture will become thick and goopy first then will thin out. Just keep adding the milk 1/4 cup at a time and mixing well after each addition and you'll get a perfect roux.
  • Add salt and cheddar cheese (1 cup at a time) and stir until cheese has melted and sauce has thickened.
  • Pour noodles into the cheese mixture, stir to combine and then pour the entire mixture into a 9x13 casserole dish. {If using dutch oven, just bake in dutch oven, no need to dirty another pan!}
  • Mix the melted butter & crushed Ritz crackers together. Sprinkle on top of Macaroni.
  • Bake in oven for 45 minutes until top is golden.
  • Serve Immediately
