This is my version of the classic macaroni and cheese Xea's grandmother makes. Older kids can easily make this by themselves. Add a big green salad and they can have dinner ready before you get home from work!

1 pound penne rigate pasta
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon freshly ground black pepper
1/2 pound shredded whole-milk mozzarella cheese
1/2 pound shredded Cheddar cheese
1/2 cup shredded Parmigiano-Reggiano cheese
1/2 cup dried breadcrumbs (preferably panko)

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the penne rigate according to the package directions, minus 1 or 2 minutes of cooking time (see Cook's Note). Drain, then pour the pasta into a 9-by-13-inch glass baking pan.
  • In a 4-quart saucepan, melt the butter on medium-low heat. Whisk in the flour until it's dissolved. Add the cream to the saucepan. Add the nutmeg, seasoned salt, and black pepper and whisk the mixture until it's warmed through.
  • Reduce the heat to low, and add the mozzarella, Cheddar, and Parmigiano-Reggiano. Stir until you have a smooth cheese sauce.
  • Pour the sauce over the pasta and top with the breadcrumbs.
  • Bake for about 40 minutes, until the top turns a golden brown.

2 jars (24 ounces each) pasta sauce with meat
1/2 cup grated Romano cheese
1 package (12 ounces) frozen fully cooked Italian meatballs, thawed
3/4 cup shaved Parmesan cheese
Minced fresh parsley or fresh baby arugula, optional

  • Preheat oven to 350°. Cook mostaccioli according to package directions for al dente; drain. Meanwhile, in a small bowl, mix eggs and ricotta cheese., In a 6-qt. stockpot, cook beef and onion 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. 8 ounces mostaccioli pasta (ziti or penne' pasta could also be used)
1/4 cup butter or 1/4 cup margarine
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
4 1/2 cups milk
2 cups shredded sharp cheddar cheese
1/2 cup grated parmesan cheese
1 cup shredded swiss cheese

Steps:

  • Cook Pasta "al dente" style. While Pasta is cooking, preheat oven to 350 degrees.
  • Melt Butter in a large saucepan under medium heat. Stir in Flour, Salt and Pepper. Gradually add Milk; cook and stir until it thickens and slowly bubbles.
  • Remove from heat; stir in 1 cup each Cheddar and Parmesan Cheese, blend until mixed well. Stir in Pasta.
  • Spoon 1/2 Pasta and sauce into greased 13" x 9" baking dish. Layer with Swiss Cheese, then remaining Pasta mixture.
  • Cover and bake 25-30 minutes or until hot and bubbly.
  • Uncover and sprinkle remaining Cheddar Cheese over the top. Serve after Cheese melts, about 5-10 minutes.

1 pound ground beef
1 pound salsiccia (if you can't find this, you can use Italian sausage)
1/2 teaspoon garlic salt
45 ounces spaghetti sauce (we use Ragu Old World Style)
1 teaspoon Italian seasoning
6 slices American Cheese
6-8 slices Mozzarella Cheese
3 slices Provolone Cheese

Steps:

  • Preheat oven to 350° F
  • Cook pasta according to package directions; drain and set aside. Meanwhile, using a large saucepan or deep skillet, cook ground beef, salsitccia, and garlic salt over medium heat until meat is no longer pink. Drain grease. Add sauce and Italian seasoning to meat mixture and bring to a boil. Reduce heat and let simmer uncovered for about 15-20 minutes.
  • Grease a 9×13-inch glass dish and then layer half of the cooked pasta into the bottom of the greased dish. Top with 3 pieces of American cheese and 3 pieces of Mozzarella cheese each torn into small pieces (placing the cheese on the noodles is a VERY important secret step). Pour half of the sauce over the cheese and pasta, using a spoon to cover the noodles.
  • For the second layer: add remaining pasta, then this time 3 pieces of American cheese and 3 pieces of Provolone cheese, each torn into small pieces. Pour remaining sauce over top (again, use a spoon to cover the noodles) and top with remaining Mozzarella cheese torn into smaller pieces.
  • Bake for 30-45 minutes or until hot and bubbly. Let sit 10-15 minutes before serving and enjoy!

2 tablespoons margarine or 2 tablespoons butter
1/4 cup all-purpose flour
1/2 teaspoon dried basil leaves
1/2 teaspoon salt

1 1/4 cups shredded cheddar cheese, divided
1 cup shredded monterey jack cheese
1/2 cup fresh shredded parmesan cheese, divided

Steps:

  • Heat conventional oven to 375 degrees F.
  • Prepare mostaccioli as directed on package, rinse and drain, set aside.
