4 tablespoons shelled pistachios
2 tablespoons unsalted butter
1/2 cup confectioners' sugar
2 drops (less than 1/8 teaspoon) almond extract (optional)
1/8 teaspoon salt
2 nectarines, halved and pitted
1/2 lemon
1/2 cup creme fraiche
1 tablespoon granulated sugar

Steps:

  • Preheat oven to 400 degrees. Chop 3 tablespoons pistachios in a food processor until finely ground. Add butter, confectioners' sugar, almond extract, and salt. Process until combined.
  • Place nectarines, cut side up, on a baking sheet, and squeeze lemon over top. Place a generous tablespoon of pistachio mixture on each nectarine half. 50g fresh wholemeal breadcrumbs
25g porridge oats
50g demerara sugar
25g shelled pistachios , finely chopped
500g fresh low-fat custard
500g 0% fat Greek yogurt
2 tbsp maple syrup or Greek honey
4 ripe nectarines , stoned, thinly sliced

Steps:

  • Heat oven to 180C/160C fan/gas 4. Mix breadcrumbs, porridge oats, sugar and pistachios together and spread out in an even layer on a baking parchment-lined baking tray. Bake for 8 mins, stirring half way, until crisp and golden brown. Cool.
  • Gradually beat the custard into the yogurt in a mixing bowl. Sweeten with the syrup or honey. Using dessert glasses or pots, layer up the pistachio crumbs, the nectarines and the custard mix.

1 lb nectarine
1/2 cup light brown sugar, packed
2 teaspoons cinnamon
4 tablespoons butter
1 cup honey graham crackers, crushed (if you use cinnamon graham crackers, just leave out the cinnamon)
3 cups vanilla ice cream

Steps:

  • Cut up nectarines into bite sized pieces. (Figure about 1-1/2 nectarines per person.).
  • Place in bottom of baking dish.
  • Sprinkle with brown sugar (I usually use no more than a tablespoon per nectarine) and cinnamon (as much as you want).
  • Then crush graham crackers over the top, about one whole graham cracker per nectarine.
  • Then, randomly place small pads of butter over the top -- you don't need much, but it keeps the top moist.
  • Then, bake at 400 for 15 minutes or until desired softness.
  • Let it cool for a little bit, then scoop over ice cream.
  • You can use peaches instead of nectarines if you can't find them, but I have found that nectarines turn out sweeter and juicier.

9 nectarines
2 tablespoons brandy
2 ounces brown sugar
8 ounces raspberries
1 ounce sliced almonds

Steps:

  • Pree heat oven to 400°F.
  • Cut nectarines in half and remove pit.
  • Place nectarines and raspberries on a baking sheet. Drizzle brandy and brown sugar overtop and bake in oven for 10 minutes.
  • Just before serving top with flaked almonds.

  • Choose ripe, firm nectarines for the best flavor and texture.
